Eggplant Parmesan Soup … this maybe one of my favorite soups. If you would like it gluten free let me know , I will omit the croutons. Ingredients: eggplant, olive oil, garlic, onions, celery, carrots, tomatoes, tomato juice, veggie stock, oregano, basil, croutons, Parmesan, kosher salt and pepper. 13. Per quart served with bread vegetarian

Thai Red Curry Chicken Noodle Soup ... an explosion of flavors and textures. Ingredients: canola oil, shallots, garlic, scallions, ginger, curry powder, curry paste, chicken stock, coconut milk, chicken, fish sauce, soy sauce, rice noodles, and cilantro. Garnished w. Bean sprouts and lime. 13 per quart served with bread. Gluten free

Enjoy the Indian summer tomorrow and Wednesday- this maybe the end of the gardening season, mild nights, and steamy afternoons for a while!

Silky Cauliflower Soup… this simple soup tastes like so much more them it is!  A creamy, smooth cauliflower soup garnished s. Spiced roasted cauliflower and a sprinkle of fresh herbs. Ingredients : cauliflower, onions, garlic, olive oil, veggie stock, Parmesan cheese.  Garnish : cauliflower. Olive oil, salt, pepper, cumin, paprika and turmeric. 13. Per quart served w. Bread. Vegetarian & gluten- free

Beef  & Black Bean Chili… my most popular chili, lots of beans, beef and yummy toppings. Ingredients : canola oil, onions, garlic, black beans, ground beef, tomatoes, cumin, chili powder, chipotle in Adobe, kosher salt, pepper, and lime juice. Garnished w. Sour cream, cilantro and cheddar cheese. 13. Per quart served w. Bread. Gluten -free

Welcome October!

Libyan Beef & Chickpea Soup… a riff on what is considered one of Libya’s national dishes. This version has meatballs made w. Beef rather then lamb and uses fresh mint and parsley as opposed to dried. Full of flavor and slightly spicy this may become a new favorite. Ingredients : meatballs: bread crumbs, local ground beef, kosher salt, fresh mint and fresh parsley. Soup: olive oil, onions, cumin, turmeric, diced tomatoes, harissa, chicken stock, chickpeas, couscous, lemon juice, kosher salt, pepper and fresh parsley. 13. Per quart served w. Bread

Broccoli Cheddar Soup.. a classic. Heavy on the broccoli, a bit lighter on the dairy- a combination that creates a creamy, rich and comforting soup. Ingredients: butter, onions, garlic, flour, half and half, veggie stock, bay leaf, broccoli,carrots, cheddar cheese, kosher salt and pepper. 13. This will be the last soup Thursday in September!  How did that happen?  Enjoy this most amazing time of the year – and cozy up with a quart or two of soup!

Vegetarian Mulligatawny… this is a one of my more popular soups. Ingredients: canola oil, garlic, onions, celery, carrots, lentils, tomatoes, chickpeas, tomato juice, yellow curry powder, cumin, coriander, coconut milk, basmati rice, cilantro, kosher salt and pepper. 13. Chicken Noodle Soup… The cure all for fall colds and shorter days. Ingredients: homemade stock (onions, carrots, celery, garlic, parsley, peppercorns, bay leaf, chicken, water and kosher salt) soup: egg noodles, celery, carrots, chicken, parsley.  13. Per quart served w. Bread

Soups & Sweet Treat 9.20.18

I read yesterday, on the NOAA Burlington site, that we have had 80 days 80 or over this year. I for one say yuck!  Heat and humidity are not my things. I crave the crisp days of fall, spring – and even winter. Sweatshirts, increased energy level, and SOUP weather. If the meteorologists are to believed today will be the last hot one for a while!  Thursday the highs will be in the 60s and lows may dip into the 40s. Time to tuck into a quart or two of soup!

Indian Spiced Cauliflower Soup …warm Indian spices perked up with a hit of fresh lime and cooled down with a dollop of Greek yoghurt.  Ingredients: olive oil, cumin, fennel, onions, potatoes, fresh ginger, garlic, jalapeño, coriander, turmeric, cauliflower ,tomatoes, lime juice, kosher salt, pepper. Garnished w. Greek yoghurt. 13. Per quart served w. Bread. Vegetarian, vegan (minus dairy garnish ), gluten-free (minus bread)

”Hamburger“ Soup : a favorite of mine this is a soup that my grandmother made. I made and froze batches of this near the end of my pregnancy with both my girls. It’s that kind of soup- comforting, filling, and popular with kids and adults. Ingredients: onions, celery, carrots, garlic, local ground beef, barley, ketchup, dried thyme, dried oregano, fresh parsley, kosher salt and pepper. 13. Per quart served w. Bread and Parmesan cheese. 

Sweet Treat: Double Chocolate Zucchini Bread – more like a really moist chocolate cake sprinkled w. Confectioners sugar  2  per slice

Italian Sausage & Zucchini Soup… loaded with end of summer veggies and herbs this soup has a rich broth thanks to the sausage!  Ingredients…olive oil, sweet Italian sausage, sweet peppers, onions, garlic, zucchini, tomatoes, fresh oregano, basil, thyme, parsley, kosher salt and pepper. Garnished with Parmesan  13  per quart served w. Bread  gluten-free, dairy-free (minus cheese garnish )

Soups & Sweet Treat 9.6.18

Labor day has come and gone, that’s means it’s time for the soup pots to come down! What a summer- record heat, record humidity, not my favorite!  Tomorrow looks brutal BUT after that the air may change. I’m looking forward to cooler days, colder nights and softer light. This weeks soups take advantage of amazing late summer produce and can be enjoyed chilled, at room temp or heated.

Simple Corn Chowder…the amazing flavor from this corn chowder comes from using the cons of the fresh corn to make a quick stock. This soup is surprisingly just as delicious chilled as it is hot!  Ingredients: fresh local corn, bay leaf, fennel seeds, coriander seeds, pepper, butter, onions, garlic, potatoes, half and half, kosher salt, and garnished w sliced scallions. 13. Per quart served w bread  Vegetarian and Gluten -free

Gazpacho …a smooth version loaded with fresh tomatoes, cucumbers , peppers, and fresh herbs  Ingredients: bread, tomatoes, cucumbers, sweet peppers, fresh oregano, onions, garlic, kosher salt, pepper, olive oil Garnisjed w. Avocado Crema…thanks to ground cumin and slightly spicy chorizo, this is a black Bean soup full of bold flavors. Ingredients : black beans, bay leaf, onions, thyme, parsley, chorizo, garlic, cumin, chicken stock, kosher salt and pepper. Garnished w. Reminder: as the days are growing warmer PLEASE leave some form of ice pack in your cooler, bag, box etc. I deliver between 1:30-3:30 – it is important that your soup remains properly chilled!

Thai Red Curry Shrimp Noodle Soup…a bit of spice mellowed by coconut milk and lemon. A handful of rice noodles and some juicy shrimp make it a complete meal. Ingredients: canola oil, ginger, garlic, lemongrass, cilantro, turmeric, a bit of Thai red curry paste, pinch of sugar, veggie stock, fish sauce, coconut milk, shrimp, rice noodles and lime juice. Garnished w. Lime wedges & bean sprouts. 13. Per quart w. Bread. Gluten-free

Lemony Carrot and Cauliflower Soup…pretty to look at, full of good for you veggies and tastes great!  Ingredients: crushed coriander seeds, olive oil, garlic, onions, carrots, white miso, cauliflower, lemon zest, lemon juice, kosher salt and pepper. 13. Soups & Sweet Treat 5.10.18

Spring is finally, really here!  Signs around my yard – daffodils, tulips, baby leaves, lettuce and chard growing, cherry blossoms – AND an orphaned baby squirrel that has taken up residence in my chicken coop. As a gardener I am not fond of what I call “tree rats”. However, this little rodent is bringing out my nurturing instincts. Hopefully he/she will join the other squirrels soon, OR become a chicken. Nature is always full of surprises.

Enjoy the sunshine and new growth this week. Order a quart or two of soup, and maybe enjoy it outside!
