What a beautiful weekend!  It is amazing how blue the sky was and how warm the mid March sun is!  The calendar now says spring- but the weather this week will still feel like winter.  Classic comfort soups are in the offering!

Country Split Pea…customized for those who eat meat and those who don’t! Ingredients: canola oil, onions, celery, carrots, garlic, green split peas, fresh thyme, bay leaves, veggie stock, yukon gold potatoes, kosher salt & pepper.  Optional HAM.  13. per quart served w. bread.  Vegetarian & Vegan W.OUT HAM, Gluten-Free

Hamburger Soup…a take on beef and barley- made w. local ground turkey.  Comforting and popular w. kids and grown ups!  Ingredients: carrots, celery, onions, garlic, ground turkey, tomatoes, barley, dried oregano, dried basil, dried thyme, bit of ketchup (strange but it is the magic ingredient), kosher salt & pepper.  Garnished w. Coconut Curry Noodle Soup w. CHICKEN OR TOFU…this soup is ALL about the broth.  Good enough to slurp by itself!  Ingredients: canola oil, onions, ginger, lemon grass, Thai red curry paste, paprika, tumeric, coconut milk, veggie stock, fish sauce, sugar, kaffir lime leaves, thin rice noodles, sweet potatoes, chicken or tofu, kosher salt & pepper.  Garnished w. cilantro, bean sprouts, scallions & lime.  13. per quart served w. bread.  Vegetarian & Vegan (w. tofu & minus fish sauce), Gluten-Free

Cheddar-Corn Chowder …classic corn chowder…Ingredients: onions, carrots, bacon, celery, garlic, potatoes, coriander, chicken stock, light cream, cheddar cheese, kosher salt & pepper.  Garnished w. bacon.  13.per quart served w. bread.  Gluten-Free

Soups & Sweet Treat 3.9.17

I was off last week (and today and tomorrow) with my girls for their winter break.  I think we experienced all four seasons during that week!  Summer- bare feet, ice cream and raking the garden beds, spring- mud season, rain and thunderstorms! & winter- so cold I don’t think we left the house on Saturday.  We had lots of fun spending time with friends and family, painting, and cooking!  My girls and I made Samosas last Monday- not as good as the Samosa Man’s, but pretty close.  I am ready to take the soup pots down and get back into the swing of things!

Eggplant Parmesan Soup…by far one of my most popular soups.  Ingredients: roasted eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, garlic croutons, Parmesan cheese, balsamic vinegar, kosher salt & pepper.  Garnished w. extra Parmesan.  13. per quart, served w. bread.  Vegetarian.

White Chicken Chili…creamy and full of flavor, mildly spicy & tangy from fresh lime juice.  – YUM! Ingredients: white beans, canola oil, jalapeno peppers, poblano peppers, onions, garlic, cumin, coriander, ancho chili powder, chicken stock, poached chicken breasts, fresh lime juice, cilantro, kosher salt & pepper.  Garnished w. tortilla chips & sour cream.  13. per quart served w. bread.  Gluten-Free

Soups & Sweet Treat 2.23.17

This will be the LAST soup Thursday in February…soup freezes well if you want to order an extra quart for the following Thursday!  I will be off next week- my girls have school vacation and many customers are away this last week of February-first week of March.  For those of you going to warmer places enjoy!  For those of us staying here- it would be nice to get one more snow storm to play in!!!  Soup will return 3/2/17!

Cauliflower-Potato Chowder…I was planning on making this soup this week, when yesterday, a friend told be her 10 year old daughter had been thinking about it, and wanted her to make it!  Great minds think alike!  Part creamy and full of flavor this a favorite of kids and adults.  Ingredients: canola oil, onions, garlic, carrots, celery, potatoes, cauliflower, bay leaves, cheddar cheese, whole milk,  a bit of mustard, kosher salt & pepper.  Garnished w. scallions.  13. per quart. Vegetarian  & Gluten-Free

Italian Wedding Soup…One of my favorites- I can’t believe I haven’t made it yet this season!  Tiny meatballs, tiny pasta, thinly sliced greens and a rich chicken stock.  Ingredients: Soup: chicken stock, onions, celery, garlic, kosher salt, pepper, fresh parsley., acini de pepe (tiny, tiny pasta), and thinly sliced greens.  Meatballs: ground beef, ground turkey, breadcrumbs, parmesean cheese, garlic, parsley, eggs, kosher salt & pepper.  13. per quart served w. bread.

Coconut Curried Winter Squash Soup…creamy from the coconut milk and a bit sweet from the roasted squash…a bright comforting soup!  Ingredients: butternut squash, canola oil, garlic, jalapeno, ginger, curry powder, veggie stock, coconut milk, lime juice, cilantro, kosher salt, pepper.  Garnished w. greek yogurt and toasted pumpkin seeds.  13. per quart served w. bread.  Vegetarian, Vegan (minus dairy garnish) Gluten-Free

Classic Chicken Noodle…old fashion chicken noodle soup!  Great for the body and the mind.  Ingredients: homemade chicken stock( chicken, carrot, parsnip, celery, water, thyme, tomato paste, bay leaves), carrots, celery, leeks, chicken breast, egg noodles, kosher salt, pepper & fresh parsley.  13. per quart served w. bread

Sausage Minestrone w. Orzo…classic minestrone with an enhanced tomato based stock thanks to the sausage!  Ingredients: local sweet Italian sausage, olive oil, onions, garlic, celery, carrots, tomatoes, tomato juice, bay leaves, chickpeas, cannellini beans, zuchhini, summer squash, oregano, thyme, orzo, kosher salt & pepper.  CAN BE GLUTEN FREE – I COOK AND ADD ORZO AT THE END. 13. per quart served w. bread

Vegetarian Mulligatawny Soup…loaded w. veggies, beans, rice & flavored w. curry and coconut milk- YUM! The first soup Thursday in February!  Chili will be on the menu this week- order an extra quart or two for the Super Bowl!!

Beef & Black Bean Chili w. Chipotle…thick and meaty with lots of garnishes!  My most popular chili recipe.  Ingredients:  canola oil, garlic, red onions, cumin, chili powder, chipotle peppers, black beans, local ground beef, tomatoes, cilantro, lime juice, salt and pepper.  Garnished w. sour cream, cheese & lime marinated red onions.  13. per quart served w. bread.  Gluten-Free

Broccoli Cheddar Soup…classic creamy, cheesy broccoli soup!  Ingredients:  butter, onions, garlic, carrots, broccoli, veggie stock, flour, light cream, bay leaves, salt, pepper, and cheddar cheese.  Garnished w. cheddar cheese.  13. per quart, served w. bread. Vegetarian.

Soups & Sweet Treat 1.26.17

Thank you all for your patience and understanding last week with the water main break outside of my house!  Hopefully it will hold strong for the rest of the winter!  I have a new appreciation for what comes out of my faucet!

It looks as is if the early spring weather that has been plaguing us all winter is about to go!  Time to tuck into some hearty soups….

Red Lentil Soup w. Lemon…Part creamy, part chunky and deeply flavored.  This is a wonderful lentil soup!  Ingredients:  olive oil, onions, garlic, tomato paste, cumin, pinch of chile powder, carrots, red lentils, veggie stock, lemon juice, kosher salt, pepper and fresh cilantro.  Garnished w. plain Greek yougurt.  13. per quart served w. bread.  Vegetarian, Vegan (minus garnish) & Gluten Free

Portuguese Kale Soup w. Potatoes & Sausage…this is a wonderful mid winter soup.  It always amazes me what good sausage can do to a soup broth.  In this soup , the kale is slowly cooked until it is almost sweet- some of the potatoes break down, thickening the soup, and others remain whole.  Yum!  Ingredients: olive oil, onions, garlic, potatoes, kale, linguica or chorizo sausage, chicken stock, diced tomatoes, kosher salt & pepper.  13. per quart served w. bread.  Gluten-Free

Soups & Sweet Treat 1.12.17

Brrrr…..it seems unfair that we have to suffer through single digit weather without the benefit of the fluffy white stuff.  Being a bit of a weather geek, I learned this weekend that it has been TWO years since we have received more then 4 inches at a time here in the valley. As has become the norm it will warm up this week just in time for the precipitation to turn to rain.  Thursday looks down right spring like!  This weeks soups are sure to put a a bounce in your funky winter weather step.  A highly flavored Thai soup & a nourishing greens soup- reminiscent of the first bitter greens that  sprout up in the spring.

Provencal Greens Soup…this soup was featured in the New York Times this past week.  At first glance it seemed kind of blah- but I gave it a try over the weekend and LOVED it.  The eggs and country  croututons (think crositini) give it a richness and the greens just make you feel good.  Ingredients: olive oil, leeks, garlic, chopped greens- swiss chard, dandelion, and kale, eggs, kosher salt, pepper, lemon juice.  Garnished w. slices of country bread toasted and rubbed w. olive oil  & parmesean cheese. To serve: place toasted bread in bowl and ladel hot soup over.  13. per quart served w. bread.  Vegetarian, Vegan (minus the parm).
