Herby Leek and Pea Soup w. Croutons…spring in a bowl!  Ingredients: butter, leeks, veggie broth, peas, fresh tarragon, fresh oregano, fresh parsley, creme fraiche, lemon juice, kosher salt, pepper.  Croutons: olive oil, salt , pepper, and bread.  Garnished w. croutons & herbs.  13. per quart, served w. bread.  Vegetarian, Gluten-Free (minus croutons).

Soups & Sweet Treat 5.18.17

Temps on Thursday are forecast to be close to 90!!!  Talk about weather whiplash… This weeks soups can be eaten either warm or chilled.  Please be sure to leave ICE in your cooler is you will not be home!!!

Tomato and Ginger Soup w. Grilled Chicken…gingery tomato soup with a Chinese flavor base, served w. sliced grilled chicken on top.  Ingredients: Grilled marinated chicken breasts, canola oil, garlic, fresh ginger, onions, celery, carrots, tomatoes, coriander, chicken stock, soy sauce, rice wine vinegar, pepper & fresh cilantro.  13. per quart served w. bread.  Gluten-Free

Chilled Curried Carrot Soup…If you are not a fan of chilled soups, this one tastes just as good hot as it does cold!  Ingredients: canola, oil, carrots, onions, garlic, fresh ginger, jalapeno, curry powder, coconut milk, lime juice, kosher salt, pepper and fresh cilantro.  Garnished w. I took a week off and Burlington decided to go green!  Enjoy the gaudy splendor of spring in Vermont!

Mexican Tortilla Soup…my ode to Cinco De Mayo…Ingredients: canola oil, onions, green pepper, garlic, cumin, chipotle in adobo, chicken stock, tomatoes, chicken, kosher salt, and pepper.  Garnished w. sour cream, scallions, cilantro, tortilla strips & lime wedges.  13. per quart, served w. bread.  Gluten-Free

Corn & Roasted Red Pepper Chowder…the color of a sunset & a favorite among fans of corn chowder.  Ingredients: canola oil, onions, celery, carrots, garlic, yukon gold potatoes, veggie stock, coriander, bay leaves, corn, whole milk, pureed roasted red peppers, kosher salt, pepper & fresh cilantro.  13. per quart served w. bread.  Gluten-Free & Vegetarian.

This will be the last soup & sweet treat Thursday in April.  I will be on break the last week of the month and will return the first Thursday in May!

Cream of Spinach Soup…This soup mimics the color of early spring in Vermont!  Ingredients: olive oil, butter, onions, garlic, celery, potatoes, veggie stock, fresh spinach, nutmeg, whole milk, kosher salt, ground pepper.  Garnished w. herbed croutons.  13. per quart served w. bread.  Vegetarian & Gluten Free minus garnish.

Chili…local ground turkey & a medley of peppers- yum!  Ingredients: ground turkey, black beans, pinto beans, rainbow peppers, onions, cumin, chili powder, oregano, garlic, tomatoes, cilantro, kosher salt & pepper.  Garnished w. sour cream and tortilla chips.  13. per quart served w. bread.

Hello Spring- to celebrate enjoy a quart or two of Spring-y soups this week!

Asparagus & Rice Soup…this soup has minimal ingredients yet has a magic taste! Adapted from Judy Rogers’ Zuni cookbook.  Ingredients: olive oil, onions, chicken stock, asparagus, bacon or pancetta, white rice, kosher salt & freshly ground pepper.  Garnished w. Tomato Garlic Soup w. Spinach & Tortellini…delicious broth, fresh green spinach and filling cheese tortellini!  Ingredients: veggie stock, garlic, olive oil, paprika, fresh thyme, fresh parsley, canned chopped tomatoes, fresh spinach, cheese tortellini, kosher salt & pepper.  Garnished w. Hello April!  I was so happy to turn the calendar on Saturday- sloppy snow storm and all!  Enjoy the beautiful spring weather today…looks like April showers for the rest of the week.  Perfect for melting the snow and feeding the spring bulbs!

What a beautiful weekend!  It is amazing how blue the sky was and how warm the mid March sun is!  The calendar now says spring- but the weather this week will still feel like winter.  Classic comfort soups are in the offering!

Country Split Pea…customized for those who eat meat and those who don’t! Coconut Curry Noodle Soup w. Soups & Sweet Treat 3.9.17

I was off last week (and today and tomorrow) with my girls for their winter break.  I think we experienced all four seasons during that week!  Summer- bare feet, ice cream and raking the garden beds, spring- mud season, rain and thunderstorms! & winter- so cold I don’t think we left the house on Saturday.  We had lots of fun spending time with friends and family, painting, and cooking!  My girls and I made Samosas last Monday- not as good as the Samosa Man’s, but pretty close.  I am ready to take the soup pots down and get back into the swing of things!

Eggplant Parmesan Soup…by far one of my most popular soups.  Ingredients: roasted eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, garlic croutons, Parmesan cheese, balsamic vinegar, kosher salt & pepper.  Garnished w. extra Parmesan.  13. per quart, served w. bread.  Vegetarian.

White Chicken Chili…creamy and full of flavor, mildly spicy & tangy from fresh lime juice.  – YUM! Ingredients: white beans, canola oil, jalapeno peppers, poblano peppers, onions, garlic, cumin, coriander, ancho chili powder, chicken stock, poached chicken breasts, fresh lime juice, cilantro, kosher salt & pepper.  Garnished w. tortilla chips & sour cream.  13. per quart served w. bread.  Gluten-Free
