Soups & Sweet for February 3rd

Thursday the 3rd marks the lunar new year.  In celebration the non-vegetarian soup of the week will be: Wonton Soup…ingredients are…homemade wontons (lean ground pork, cilantro, egg white, garlic, ginger, sesame oil, red pepper, scallions & soy sauce) simmered in a chicken broth flavored with soy sauce, ginger & garlic.  Soup is garnished with grated carrot and sliced scallions.  Bread will not be served with this soup.

Moving into February the days are slowly starting to get longer!  This yummy soup is warming on a cold winter night but also provides a taste of warmer places.

Coconut Curried Winter Squash Soup…ingredients are butternut squash, canola oil, garlic, jalapeno pepper, fresh ginger, curry powder, veggie broth, coconut milk, lime and fresh cilantro.  Served with bread for dipping.

The forecast for the weekend is nothing short of dismal….cold, cold and more cold.  Perfect soup weather!  Let’s hope that by Thursday  the temps are at least climbing into the double digits….and the soups are:

“Hamburger” Soup: This is one of the first homemade soups that I remember eating, and liking!  My grandmother use to make it in the winter.  When she learned to cook things such as seasoned salt, shaker cheese etc. were the norm.  My version is updated and contains ground turkey instead of ground beef but it is still one of my favorites.  Ingredients….Ground turkey, tomatoes, chicken broth, barley, carrots, onions, celery, garlic,bay leaf, mixed italian spices, an itty bit of ketchup (the secret ingredient) and garnished with freshly grated parmesan cheese.  A bowl of comfort especially when served with fresh bread!

(vegetarian) White Bean Soup w/Winter Vegetables: ingredients…parmesan rind (for flavor), cannellini beans, onions, garlic, bay leaf, extra virgin olive oil, carrots, celery, leeks, kale, escarole, small white potatoes, diced tomatoes and fresh rosemary.

Menu for Thursday January 20, 2011

The snow, the cold and the start of the NFL playoff season is making me think of chili.  The soup offering for Thursday will be:

Beef & Black Bean Chili w/Chipotle & Garnishes….ingredients include: black beans, tomatoes, chipotles in adobo sauce, organic lean ground beef, red onions, poblano peppers, chili powder, lime juice and cilantro.  Garnish includes grated cheese, diced red onion in lime juice and fresh cilantro.  Beware this chili has a kick!

Vegetarian Black Bean Chili…ingredients include: black beans, cumin, mexican oregano, ancho chili powder, onions, garlic, tomatoes, poblano peppers, corn and cilantro.  Garnishes include , grated cheese, diced red onion in lime juice, and fresh cilantro.

Sweet Treat: In hopes of some sunny days ahead I will be making Lemon Bars…a light shortbread crust topped with a zippy lemon custard and sprinkled with confectioners sugar.
