The forecast for the weekend is nothing short of dismal….cold, cold and more cold.  Perfect soup weather!  Let’s hope that by Thursday  the temps are at least climbing into the double digits….and the soups are:

“Hamburger” Soup: This is one of the first homemade soups that I remember eating, and liking!  My grandmother use to make it in the winter.  When she learned to cook things such as seasoned salt, shaker cheese etc. were the norm.  My version is updated and contains ground turkey instead of ground beef but it is still one of my favorites.  Ingredients….Ground turkey, tomatoes, chicken broth, barley, carrots, onions, celery, garlic,bay leaf, mixed italian spices, an itty bit of ketchup (the secret ingredient) and garnished with freshly grated parmesan cheese.  A bowl of comfort especially when served with fresh bread!

(vegetarian) White Bean Soup w/Winter Vegetables: ingredients…parmesan rind (for flavor), cannellini beans, onions, garlic, bay leaf, extra virgin olive oil, carrots, celery, leeks, kale, escarole, small white potatoes, diced tomatoes and fresh rosemary.
