Thank you to all who have been ordering soup week after week! Last night 26 families in the south end of Burlington were enjoying homemade soup & fresh-baked cookies! What a great feeling that so many people are enjoying my soup!!!
Just a reminder that gift certificates are available & I am also available to cater small events. If you ever find yourself in need of a dinner entrée or two I cook those on Mondays…just ask.

Cheddar-Corn Chowder with Bacon & Scallions….a tasty combination of crisp bacon, sharp Vermont cheddar cheese, and crunchy scallions. Just the thing to say good-bye to March with. Ingredients: local bacon, local onions, local carrots, celery, garlic, local red potatoes (unless the Yukon golds look better), chicken stock, pinch of cayenne, coriander, corn, Cabot cheddar, local milk, an itty bit of local light cream, tad of Worcestershire sauce, salt, pepper and scallions. Served with whole grain bread.

Tomato, Butternut Squash, and Herb Soup…the butternut squash does a wonderful job of taming the acidic tomatoes and provides a luscious thickness. This soup is a vitamin powerhouse! Spring is in the air!!! The clocks have sprung ahead and the vernal equinox is this Sunday…yipeee! Last weekend I was at the Burlington Farmer’s Market and noticed some local greens interspersed between the roots of winter. I am looking forward to being able to cook with local spring produce soon…but for now we will have to settle for the roots of winter brightened with sunny flavors.

Soups & Sweet Treat for 3.17.11
This weeks soup day happens to fall on St. Patrick’s Day. I toyed with the idea of making some type of corned beef and cabbage soup….or a green desert…but decided that if you want those things you are probably better at making them then me! Instead, I decided to pay homage to the humble cabbage, which as it turns out, is a pretty big part of St. Patrick’s Day!
The cabbage is perhaps one of the cheapest vegetables yet the richest when it comes to protective vitamins. It has been hailed as a cancer inhibitor, it stimulates the immune system, kills harmful bacteria and soothes and improves circulation. Do your body a favor during these last FEW DAYS of winter and enjoy one or two of these yummy soups featuring cabbage.
Colcannon Soup….Colcannon is the gaelic word for cabbage. Colcannon is a traditional St. Patrick’s Day Dish, here in soup form. Ingredients: bacon, onions, leeks, green cabbage, garlic, white wine, chicken stock, local red potatoes, an itty bit of light cream, salt & pepper & fresh dill. Garnished with bacon and dill. Served with bread.

Spaghetti & meatballs is one of my favorite things to eat…and my children’s. For this weeks “meat” soup I decided to capture the flavor of this classic italian dish into a hearty soup.
Tomato & Meatball Soup….ingredients: Meatballs made w/shady brook farms natural ground turkey (ground turkey, bread crumbs, parmesan cheese, basil, garlic, s&p, dried oregano), olive oil, onions, carrots, celery, garlic, chicken broth, diced tomatoes & ditalini pasta. Served w/ crusty bread & freshly grated parmesan cheese for garnish.
