Soups & Sweet for 5.5.11

We have had our share of April showers!  Let’s hope that the start of May ushers in some drier weather, blossoms & the beginning of  easily accessible local produce!  This weeks soup feature spring ingredients…I can’t guarantee that they will all be Vermont grown (especially not the asparagus, to early for that) but I will try where I can!

Chicken Tortellini Soup w. Spring Veggies...Ingredients: cheese tortellini, olive oil, chicken stock, antibiotic free chicken poached chicken breasts, local baby spinach, local carrots, local green house grown basil, garlic, diced tomatoes, pinch of crushed red pepper, salt and pepper.  Garnished w. freshly grated parmesan cheese and served w. crusty bread for dipping.

Asparagus & Rice Soup…a luscious spring soup that is reminiscent of risotto…Ingredients: asparagus, olive oil, garlic, local potatoes, water, bay leaves, salt & pepper, arborio rice, white wine, optional parmesan cheese.  Garnished w. chopped local chives & parmesan cheese.  Yum…spring comfort food in a bowl!  Served w. bread.

Sweet Treat: Homemade “Oreos” !  white chocolate ganache (white chocolate and sour cream) sandwiched between chocolate icebox cookies.

Soups & Sweet Treat 4.28.11

After a week of weather reminiscent of late winter & two holidays I feel the need to prepare light, slightly spicy & tropical soups this week.  It is time for leaves on the trees, flip-flops and rain that does not contain frozen water particles!

Tomato & Ginger Soup w. Grilled Chicken…I am firing up the grill this week to make this fresh and pungent soup.  A smooth soup with sliced ginger/garlic grilled chicken.  YUM!  Ingredients…antibiotic free chicken breasts marinated with (ginger, garlic, soy sauce, ketchup, honey & rice wine vinegar), canola oil, garlic, ginger, local onions, celery, local carrots, whole canned tomatoes, coriander, red pepper flakes, chicken stock, soy sauce, rice wine vinegar, cilantro, s&p.  Served with bread.

Black Bean, Habanero Chile, and Yellow Rice Soup….This soup has a tropical taste and has a kick due to the Habanero chile.  I use only a tad of Habanero however so you do not need to have taste buds made of steel to enjoy this!  Ingredients…Yellow rice (olive oil, onion, jasmine rice, salt and a pinch of turmeric), black beans, olive oil, garlic, local onion, celery, veggie stock, crushed tomatoes, coriander, cilantro, lime juice, scallions, itty bitty bit of Habanero chile, salt & pepper.

Soups & Sweet 4.14.11

The forecast for the weekend is for highs to reach the 60’s…yipeee!  Remember that the nights still get chilly…great for a healthy homemade quart or two of soup!  This week is a repeat week.  Both soups have received many comments from customers and requests for me to make them here they are!

Albondigas Soup…a traditional Mexican soup featuring turkey meatballs made with rice and eggs & and a chicken broth filled with fresh veggies & herbs.  Ingredients…Plainfield ground turkey, white rice, local onions, garlic, cilantro, mint, mexican oregano, cumin, local carrots, diced tomatoes, zucchini, green peas, chicken stock and s&p.  Garnished with fresh cilantro & crushed local tortilla chips, served with bread.

This was the first soup I made and everyone loved it!  Indian Red Lentil & Tofu Soup…a bit spicy & a bit sweet this is sure to be a favorite.  Ingredients… local carrots, local onions, golden delicious apples, celery, canola oil, garam masala, fresh ginger, veggie stock, coconut milk, red lentils, tofu, cilantro,s&p.  Garnished w/fresh cilantro and served with bread.

Sweet Treat: Double Chocolate Brownies (with our w/out walnuts…please specify) Ingredients: butter, sugar, cocoa powder, unbleached flour, baking powder, salt, bittersweet chocolate, semisweet chocolate, eggs, kosher salt, vanilla extract and optional walnuts.

Note: I will be taking a soupcation the week of April 18th-April 22.  There will be no soup on the 21st!  I will send an email out on Friday 4.22 with the soups and sweets for 4.28!

Soups & Sweet Treat for 4.7.11

April is here & the weather forecasters played a great joke on us!  I for one am thankful that the “predicted” winter storm was a no-show!  To celebrate the beginning of April and to help usher in the daffodils, tulips, forsythia & magnolias this weeks soups will feature some classic spring ingredients: eggs, local spinach & mint while still making use of some of the winters bounty. 

As an aside I am in the process of trying to become a member of the Vermont Fresh Network so that I can partner with a local farmer or two in order to start offering more local ingredients!  I will keep you posted on the progression.

Here are the soups….

Greek Orzo, Lemon & Chicken Soup…Rich homemade chicken stock infused with lemon juice and zest, fresh spinach & threads of cooked eggs.  An instant spirit lifter!  ingredients: chicken stock (chicken wings & thighs, onions, celery, local carrots, parsley, pay leaves, salt & pepper), orzo, local cage free eggs, lemons, local spinach, poached chicken breasts, salt & pepper.  Garnished with fresh dill and served with bread.

Eggplant, Roasted Red Pepper & Mint Soup: a beautiful creamy coral colored soup with smoky flavors balanced with fresh mint.  Ingredients: eggplant, olive oil, garlic, onions, celery, local carrots, roasted red peppers, veggie stock, tomato juice, optional local light cream, mint leaves, tabasco sauce, dash of Worcestershire sauce, kosher salt & pepper.  Garnished with Toasted pita chips and served with bread.

Gluten-Free, Vegetarian &  can be Vegan if specified.

Sweet Treat: White Chocolate Chip Cookies…A chocolate cooked studded with white chocolate chips.  Ingredients: unbleached flour, cocoa powder, baking soda, kosher salt, unsalted butter, light brown sugar, granulated sugar, eggs, white chocolate chips.
