April is here & the weather forecasters played a great joke on us! I for one am thankful that the “predicted” winter storm was a no-show! To celebrate the beginning of April and to help usher in the daffodils, tulips, forsythia & magnolias this weeks soups will feature some classic spring ingredients: eggs, local spinach & mint while still making use of some of the winters bounty.
As an aside I am in the process of trying to become a member of the Vermont Fresh Network so that I can partner with a local farmer or two in order to start offering more local ingredients! I will keep you posted on the progression.
Here are the soups….
Greek Orzo, Lemon & Chicken Soup…Rich homemade chicken stock infused with lemon juice and zest, fresh spinach & threads of cooked eggs. An instant spirit lifter! ingredients: chicken stock (chicken wings & thighs, onions, celery, local carrots, parsley, pay leaves, salt & pepper), orzo, local cage free eggs, lemons, local spinach, poached chicken breasts, salt & pepper. Garnished with fresh dill and served with bread.

Eggplant, Roasted Red Pepper & Mint Soup: a beautiful creamy coral colored soup with smoky flavors balanced with fresh mint. Ingredients: eggplant, olive oil, garlic, onions, celery, local carrots, roasted red peppers, veggie stock, tomato juice, optional local light cream, mint leaves, tabasco sauce, dash of Worcestershire sauce, kosher salt & pepper. Garnished with Toasted pita chips and served with bread.
Gluten-Free, Vegetarian & can be Vegan if specified.

Sweet Treat: White Chocolate Chip Cookies…A chocolate cooked studded with white chocolate chips. Ingredients: unbleached flour, cocoa powder, baking soda, kosher salt, unsalted butter, light brown sugar, granulated sugar, eggs, white chocolate chips.
