After a week of weather reminiscent of late winter & two holidays I feel the need to prepare light, slightly spicy & tropical soups this week. It is time for leaves on the trees, flip-flops and rain that does not contain frozen water particles!
Tomato & Ginger Soup w. Grilled Chicken…I am firing up the grill this week to make this fresh and pungent soup. A smooth soup with sliced ginger/garlic grilled chicken. YUM! Ingredients…antibiotic free chicken breasts marinated with (ginger, garlic, soy sauce, ketchup, honey & rice wine vinegar), canola oil, garlic, ginger, local onions, celery, local carrots, whole canned tomatoes, coriander, red pepper flakes, chicken stock, soy sauce, rice wine vinegar, cilantro, s&p. Served with bread.

Black Bean, Habanero Chile, and Yellow Rice Soup….This soup has a tropical taste and has a kick due to the Habanero chile. I use only a tad of Habanero however so you do not need to have taste buds made of steel to enjoy this! Ingredients…Yellow rice (olive oil, onion, jasmine rice, salt and a pinch of turmeric), black beans, olive oil, garlic, local onion, celery, veggie stock, crushed tomatoes, coriander, cilantro, lime juice, scallions, itty bitty bit of Habanero chile, salt & pepper.
