Soups & Sweet Treat for 6.30.11…the last day of JUNE!!!

The theme of this weeks soups is the tomato.  While it is still too early to make soups with sweet, juicy, field ripened tomatoes there are plenty of local green house ripened tomatoes available.  Nothing says summer to me like tomatoes…yum!  

Spicy Tomato Broth with Couscous & Chicken…a North African inspired soup with a mildly spicy broth.  Ingredients: olive oil, onions, organic chicken thighs, cumin, paprika, turmeric, cinnamon, chicken stock, harissa, tomato paste, tomatoes, couscous, lemon juice, salt & pepper.  Garnished with fresh local mint & basil.  Served w. bread.  13. quart

***Can easily omit the couscous and substitute potatoes if to make glute-free…just specify

Chilled Fresh Tomato, Basil & Bread Soup…bread helps thicken this yummy summer soup making dairy products unneccessary.  Ingredients: Local French bread, kosher salt, local basil, tomatoes, veggie stock, garlic, sherry vinegar & olive oil.  Garnished with pesto (on the side) and toasted pine nuts.  Served with bread.  This soup can also be eaten warm if prefered.  13. quart

Sweet Treat: One of my favorite summer deserts is S’mores…here they are turned into a brownie. 

S’mores brownies…Graham cracker crust, brownie middle, marshmallow topping.

Soups & Sweets 6.16.11

I have been waiting to post this weeks soups to see what kind of weather we will have on Thursday.  It seems that this spring (almost summer) it is either cold and rainy or hazy, hot & humid.  The forecast for Thursday looks almost “normal” for this time of year.  I have decided to offer one of my favorite soups as the non-vegetarian option and a soup that maybe eaten either heated or chilled for the vegetarian option.  If you want a hearty soup and are not a vegetarian order the meat…if you want a lighter option that can be eaten chilled go for the veggie!!!  One of each is also always an option.

Italian Wedding Soup…Ingredients: ground turkey meatball***IF SPECIFIED THE CHEESE MAYBE LEFT OUT OF YOUR MEATBALLS***(Plainfield Ground Turkey, bread crumbs, garlic, local italian parsley, parmesan cheese, egg, salt & pepper), olive oil, onions, carrots, celery, chicken stock, mini bow-tie pasta, local baby spinach, garnished with fresh dill and parmesan cheese.  YUM!

Chilled (or not!) Curried Carrot Soup…Ingredients…olive oil, local carrots, onion, shallot, garlic, ginger, jalapeno, coriander, curry powder, veggie stock, coconut milk, lime juice…garnished with cilantro and toasted pepitas.

Soups & Sweet 6.9.11

After a two-week respite…one due to a sick child and two due to a reunion with friends that live in California I am back in action!!  Because I was slow on the draw posting this weeks selections the order deadline has been extended to Wednesday morning at 7am….however, I always find it helpful if you can get your orders in ASAP!  Please remember that as it is getting warmer it if IMPORTANT to remember to leave some form of ice in your cooler so that your soup stays cold until ready to eat!

Caribbean Chicken Soup w. Coconut…a hot, tangy, and slightly sweet chicken soup with a wonderful tropical feel!  This soup as all of the healing qualities of a traditional chicken soup, but even a bit more thanks to the ginger.  It is also more suited to the warm weather!  Ingredients…canola oil, garlic, fresh ginger, local onions, celery, carrots, an itty bit of red bell pepper, antibiotic free chicken breasts, corn, coconut milk, chicken stock, zest & juice of fresh limes, coriander, allspice, dash of Habanero sauce.  Garnished with toasted coconut and fresh cilantro.  Served with bread.

Eggplant, Roasted Red Pepper, and Mint Soup….this has been a popular vegetarian selection in the past.  A smooth, smoky flavored soup with a beautiful color.  This soup is wonderful eaten both hot or cold.  Ingredients…eggplant, olive oil, garlic, onion, celery, local carrots, roasted red peppers, veggie stock, tomato juice, whole milk, local mint, few dashes of tabasco, salt & pepper.  Garnished with Toasted Pita Chips and served with bread.

13. per quart  vegetarian, gluten-free and can be vegan if specified (I will just omit the milk from your portion).

Sweet Treat…The famous Chewy Double Chocolate Cookies…YUM!
