Happy fall!  The temperatures still say summer but the leaves are starting to turn and the days are getting shorter.  The temperature will soon start to fall so it is time to fill the belly with yummy SOUP to prepare for the impending chill.

Caribbean Sweet Potato & coconut Soup… I love coconut milk & coconut milk and sweet potato is an almost perfect marriage.  This is a golden soup with a silky texture.  Ingredients: onions, celery, canola oil, fresh ginger, curry powder, nutmeg, bay leaves, mild veggie stock, sweet potatoes, grated orange zest, orange juice, coconut milk, itty bitty bit of jalapeno pepper & kosher salt.  Garnished w. fresh cilantro.  Gluten-Free, Vegetarian & Vegan

Chili Con Carne…A full flavored and zesty chili featuring veggies, organic ground beef & a mix of beans.  ingredients: canola oil, garlic, spanish onions, red bell pepper, yellow bell pepper, organic ground beef, black beans, kidney beans, crushed tomatoes, tomato juice, chicken stock, chili powder, cumin, oregano, a few dashes of hot sauce, kosher salt & pepper.  Garnished w. fresh cilantro, sour cream & grated cheese. Gluten-Free

Soups & Sweet Treat for 9.22.11

What a wonderful stretch of beautiful late summer days!  The soups will again this week feature late summer herbs & produce as well as fall favorites.

Pasta E Fagioli or Pasta & Beans…Ingredients: onion, carrots, celery, fennel, garlic, olive oil, tomatoes, veggie stock, white beans, ditalini pasta, salt & pepper, fresh basil & parsley.  Garnished w. optional parmesan cheese.  Vegetarian, Vegan (minus cheese)

Minestra of Squash & Rice w. Sage & Bacon…This is a soup version of my favorite fall risotto.  Ingredients: olive oil, bacon, onion, carrot, celery, butternut squash, chicken stock, arborio rice, salt & pepper, fresh parsley & sage, parmesan cheese.  Garnished w. crumbled bacon and fried sage leaves.  Gluten Free

Soups & Sweet for 9.15.11

It felt great to once again lug out the stock pot, chop, simmer & whirl!  Thanks to everyone who ordered…hope you enjoyed your meal!

This is a great time of year for cooking.  Local summer veggies are still available, fall veggies are appearing in the market, and the air and light make eating and cooking oh so enjoyable! 

Albonidgas Soup…a traditional Mexican soup featuring turkey meatball made with rice and eggs floating in a savory chicken broth filled with fresh veggies and herbs.  Ingredients: Plainfield ground turkey, rice, eggs, onions, garlic, zucchini, green beans, oregano, cumin, cilantro & mint.  Garnished w. fresh cilantro & crumbled tortilla chips & served w. bread.  Gluten-Free

Mushroom Lentil Soup… A hearty blend of mushrooms, brown lentils & veggies.  Each bite is both smooth & chewy.  Garnished with fresh parsley & scallions which adds a burst of green crunchiness!  Ingredients: olive oil, garlic, onions, celery, carrots, Portobello mushrooms, shiitake mushrooms, white mushrooms, dried lentils, white wine, veggie stock, bay leaves, fresh thyme & sherry vinegar.  Garnished w. fresh parsley & scallions, served w. bread.  Gluten-free, Vegetarian & Vegan

Sweet Treat…Vermont Apple Cake This is one of my fall go-to cake recipes.  I found it years ago in the Vermont Harvest Magazine which is published by the Vermont Agency of Agriculture.  It is full of simple flavors and tastes like fall.  ingredients: eggs, sugar, brown sugar, canola oil, flour, vanilla, cinnamon, baking soda, kosher salt, diced apples, WALNUTS OR CHOCOLATE CHIPS…(I will be making one cake w. chocolate chips and one with walnuts, please specify)

The soup is ON! Soup & Sweet Treat for 9.8.11

After a summer hiatus I am eager to get back in the kitchen!!!  This weeks soups will feature the best of late summer veggies, and the start of fall veggies.  Remember to get your orders in by Tuesday.  Leave a cooler for ice by your door and payment in something that won’t get wet!!!  I will send reminder emails out on Wednesday. 

Tomato, Corn & Basil Soup: A smooth tomato soup studded with fresh local corn & fragrant green basil.  Ingredients: olive oil, onions, carrots, celery, garlic, local tomatoes, veggie stock, tomato juice, tomato pasted, local basil, balsamic vinegar, local corn, salt & pepper.  vegan & gluten-free

Cauliflower, Potato & Cheese Soup YUM!  ingredients: olive oil, garlic, onions, carrots, celery, cauliflower, local yukon gold potatoes, veggie stock, local cheddar, whole milk, nutmeg, dry mustard, Worcestershire sauce, tabasco, salt & pepper.  Garnished w. beet chips.  Gluten Free.  Can be vegetarian if specified (I will omit Worcestershire from your serving.)
