Soups & Sweet Treat for 9.22.11

What a wonderful stretch of beautiful late summer days!  The soups will again this week feature late summer herbs & produce as well as fall favorites.

Pasta E Fagioli or Pasta & Beans…Ingredients: onion, carrots, celery, fennel, garlic, olive oil, tomatoes, veggie stock, white beans, ditalini pasta, salt & pepper, fresh basil & parsley.  Garnished w. optional parmesan cheese.  Vegetarian, Vegan (minus cheese)

13. per quart w. bread for dunking

Minestra of Squash & Rice w. Sage & Bacon…This is a soup version of my favorite fall risotto.  Ingredients: olive oil, bacon, onion, carrot, celery, butternut squash, chicken stock, arborio rice, salt & pepper, fresh parsley & sage, parmesan cheese.  Garnished w. crumbled bacon and fried sage leaves.  Gluten Free

Sweet Treat: Chocolate Cupcakes w. Chocolate Cream Cheese Frosting  2. per cupcake
