Happy fall! The temperatures still say summer but the leaves are starting to turn and the days are getting shorter. The temperature will soon start to fall so it is time to fill the belly with yummy SOUP to prepare for the impending chill.
Caribbean Sweet Potato & coconut Soup… I love coconut milk & coconut milk and sweet potato is an almost perfect marriage. This is a golden soup with a silky texture. Ingredients: onions, celery, canola oil, fresh ginger, curry powder, nutmeg, bay leaves, mild veggie stock, sweet potatoes, grated orange zest, orange juice, coconut milk, itty bitty bit of jalapeno pepper & kosher salt.
