Soups & Sweet Treat for 12.1.11!!!

I hope that everyone had a wonderful Thanksgiving.   It sure feels a lot more like late March then the very end of November.  It looks like the chill will be back in the air on Thursday…a perfect evening to warm yourself with a yummy, healthy quart or two of soup!

Eggplant Parmesan Soup…I love eggplant parmesan!  This recipe is from the New England Soup Factory Cookbook and is great!  It has all the components of eggplant parm- and tastes just like it- but can be eaten with a spoon!  If you are VEGAN and would like this soup specify when you order…I can substitute soy parmesan cheese or just omit the parmesan cheese from your quart.  Ingredient: eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, veggie stock, white wine, dried oregano, dried basil, garlic croutons, parmesan cheese (specify soy if you prefer), balsamic vinegar, kosher salt & pepper.  Garnished w. grated parmesan & home-made garlic croutons.  Vegetarian, Vegan if specificed.  13. per quart with bread for dipping.

Hamburger Soup…I made this soup once before last winter.  This is my maternal grandmother’s recipe and is one of those classic, comforting soups that both young and old enjoy.  I often make it with ground turkey but have decided to use local ground beef this week…poultry product overload from Thanksgiving!  Ingredients: Olive oil, carrots, onion, celery, garlic, local ground beef, barley, chicken stock, diced tomatoes, itty bit of ketchup, dried oregano, dried basil, dried thyme, fresh parsley, pepper & kosher salt.  Garnished w. grated parmesan.  13. per quart served w. bread for dipping.

Sweet Treat: Coco Walnut Butter Cookies…texture like that of a fudgy brownie, yet more delicate.  1. per cookie

Soups & Sweet Treat 11.17.11

This week I have tried to stay away from Thanksgiving ingredients.  I figure almost all of us will be getting our share of roasted poultry, potatoes, squash, etc. very soon! 

Tomato & Meatball Soup…I have offered this soup before,  and feel like I have been doing a lot of “meatball” things of late, BUT I love this soup & I love meatballs!  Ingredients:  Meatballs, a combination of local ground pork &  organic ground beef, whole milk, top quality white bread, parm, fresh basil, garlic, salt & pepper.  Soup: olive oil, onion, carrots, celery, garlic, chicken broth, diced tomatoes, baby pasta.  Garnished w. Freshly grated Parmesan cheese.  The veggies in this soup get whirled right into the broth….a great way to sneak them into little mouth!  13. per quart served w. bread for dunking.

Spiced Tomato & Red Lentil Soup  Ingredients:  Vegetable oil, onions, garam masala, veggie broth, petite-diced tomatoes, red lentils,  basmati rice, celery, carrots, garlic & a pinch of cayenne.  Garnished w. Cucumber & Cilantro Raita (greek yougurt, itty bit of salt, scallion, peeled cuke & chopped cilantro).  13. per quart served w. bread for dunking.

Sweet Treat: Chocolate-Carmel Cookie Bars  2. a bar

***I will be taking a soupcation the week of 11.21 to catch up on life, volunteer at my 3rd graders Thanksgiving Feast, and eat Turkey with family and friends.  The next soup Thursday will be DECEMBER 1st!!!!

Soups & Sweet Treat for 11.10.11

Greetings Daylight Savings Time!!!  I have been awake for what seems like a whole day already!  It is nice to have a bit of extra daylight in the morning but…come 4 o’clock it sure will be getting dark!

This weeks soups are different variations of chili that were featured in this months Fine Cooking magazine.  I have always loved this magazine for its tried and true recipes and it’s emphasis on technique.  Many food magazines focus more on “stylish” lifestyles rather than food.  This magazine emphasises the food.

Spiced Roasted Chicken & Cranberry Bean Chili…Whole chickens are roasted Baharhat, an Arabic spice blend, then shredded into bite size pieces.  Ingredients: Baharhat…dried mint, dried oregano, torn bay leaves, allspice, mustard seeds, green cardamom pods, cloves, ground pepper, cinnamon, coriander, cumin, nutmeg & ginger.  Chili…cranberry beans, chicken, olive oil, onions, garlic, red & green bell peppers, ancho chili powder, diced tomatoes, chicken broth & kosher salt.  Garnished with sour cream & served w. bread.  13. per quart  Gluten-free

Vegetable-Chickpea Chili w. Fried Almonds…Ingredients: olive oil, garlic, red onion, hot paprika, chili powder, cumin , diced tomatoes, chickpeas, corn, red pepper, jalapeno, slivered almonds, cilantro & scallions.  Garnished w. Fried Almonds & Sour cream.  Served w. a side of basmati rice and bread for dipping.  13. per quart.  Vegetarian, Vegan (minus sour cream garnish) gluten-free

Sweet Treat:  SUPER GOOD CHEWY CHOCOLATE COOKIES 1.50 per cookie
