This week I have tried to stay away from Thanksgiving ingredients. I figure almost all of us will be getting our share of roasted poultry, potatoes, squash, etc. very soon!
Tomato & Meatball Soup…I have offered this soup before, and feel like I have been doing a lot of “meatball” things of late, BUT I love this soup & I love meatballs! Ingredients: Meatballs, a combination of local ground pork & organic ground beef, whole milk, top quality white bread, parm, fresh basil, garlic, salt & pepper. Soup: olive oil, onion, carrots, celery, garlic, chicken broth, diced tomatoes, baby pasta. Garnished w. Freshly grated Parmesan cheese. The veggies in this soup get whirled right into the broth….a great way to sneak them into little mouth! 13. per quart served w. bread for dunking.
Spiced Tomato & Red Lentil Soup Ingredients: Vegetable oil, onions, garam masala, veggie broth, petite-diced tomatoes, red lentils, basmati rice, celery, carrots, garlic & a pinch of cayenne. Garnished w. Cucumber & Cilantro Raita (greek yougurt, itty bit of salt, scallion, peeled cuke & chopped cilantro). 13. per quart served w. bread for dunking.

***I will be taking a soupcation the week of 11.21 to catch up on life, volunteer at my 3rd graders Thanksgiving Feast, and eat Turkey with family and friends. The next soup Thursday will be DECEMBER 1st!!!!
