Beets Cooking

This will be the last soup day of 2011!!!  Please note that the soups & sweet treat will be delivered on Wednesday this week.

In honor of the first day of winter, and the darkest day of the year,  I decided to make “sunny” soups this week. 

Corn & Roasted Red Pepper Chowder…The red peppers in this soup are pureed giving it a glow (kind of like that of a winter sunset) and a glorious taste!  Ingredients: butter, onions, celery, carrots, garlic, Yukon gold potatoes, chicken stock, coriander, bay leaves, corn, light cream, roasted red peppers, dash of Tabasco, kosher salt & pepper. Garnished w. fresh cilantro & served w. bread for dipping.  13. per quart Gluten-free

Indonesian Carrot Soup…A slightly spicy and golden-hued soup.  Ingredients: olive oil, garlic, fresh ginger, onions, celery, carrots, curry powder, coriander, cumin, red pepper flakes, veggie stock, honey, coconut milk, kosher salt & pepper.  Garnished w. fresh cilantro and served w. bread for dipping.  Gluten-free, Vegetarian & Vegan  13. per quart
