Galician White Bean with Chorizo…Creamy white beans, all natural turkey chorizo, potatoes and veggies…Ingredients: Turkey Chorizo, chicken broth, olive oil, bacon, onions, garlic, carrots, thyme, paprika, bay leaves, kosher salt & pepper, Yukon gold potatoes & dry vermouth.  Garnished w. chopped scallions & bacon.  13. per quart served w. bread .  Gluten-Free

Wild Mushroom, Cranberry Bean & KaleIngredients: olive oil, cremini mushrooms, oyster mushrooms, shiitake mushrooms, white wine, onions, celery, garlic, fresh thyme, fresh rosemary, bay leaves, cranberry beans, whole tomatoes, kale, balsamic vinegar, kosher salt & pepper.  13. per quart  served w. bread.  Gluten-free, Vegetarian & Vegan

Soups & Sweet Treat for 2.16.12

It has felt like winter this weekend, and I have to say I like it!  Cold temps, semi-white ground, clear & bitter starry nights.  One big snowstorm this winter?  I hope so!

Roasted Beet Borcht… this is not a “traditional” borcht, but is great just the same.  It turns a lovely shade pink with a dollop of sour cream swirled in.  Ingredients: local beets, thyme, carrots, garlic, veggie stock, fresh dill, red wine vinegar, kosher salt, pepper & a bit of honey.  Garnished w. sour cream & fresh dill.  13. per quart served w. bread.  Vegetarian, gluten-free & vegan minus sour cream garnish.

Beef & Black Bean Chili w. Chipotle…I hope this isn’t redundant for you!  I always get lots of rave reviews and lots of requests for this chili!  Black beans, organic ground beef, diced tomatoes, chipotle in adobo, canola oil, red onions, chili powder, cumin & lime.  Garnished w. lime marinated red onions, sour cream & cheddar cheese.  13. per quart served w. bread.  Gluten-Free (please specify!!!  that way I can be sure to buy the g-f chipotle!)

Soups & Sweet Treat for 2.9.12

I get a lot of feedback from customers…some good, some so-so, and some that can be counted as constructive criticism!  It is all welcome and helps me fine tune my soup making biz.  Some of the best feedback that I have gotten came this week from….KIDS!

My youngest is a Daisy (pre-Brownie).  A few weeks ago I did a project with her troop around soup.  It turns out that many of the little girls belong to families that are regular soupies!  Now, whenever they see me they think of soup.  This past Tuesday, at pick-up, a little girl came up to me and said: “only two more days until you bring soup to my house!  I love your soup”, and another said, “Did you know chickpeas are my favorite food?” (in reference to one of the recent vegetarian soup.

I also received an order from a new family this week, that was inspired by one of their son’s friend “talking up” my soup.  I love the fact that there are a bunch of kids out there getting excited about eating soup on Thursday nights!  Just proves that take-out doesn’t have to equal pizza!   A great big thanks out there to all the kiddos that are gobbling up their beans and veggies on Thursday nights!

The soups & Sweet Treat for Thursday are….

Lentil, Sausage & Escarole Soup…Hearty & Homey!  Ingredients: lentils, chicken broth, bay leaf, garlic, olive oil, sweet italian sausage, onions, carrots, celery, tomato paste, escarole, kosher salt & pepper & red wine vinegar.  Garnished w. croutons & parmesan cheese.  13. quart served w. crusty bread.  Gluten-Free

Curried Potato and Leek Soup w. Spinach…potatoes and spinach have a natural affinity with curry.  This soup is thick and slightly chunky.  Ingredients: canola oil, leeks, yukon gold potatoes, madras curry powder, kosher salt, black pepper, veggie stock, whole milk, spinach.  Garnished w. Greek Yogurt.  13. quart served w. bread.  Vegetarian, Vegan IF SPECIFIED & gluten-free

Sweet Treat: Chocolate Chip Apple Cake 1.50 per piece
