Soups & Sweet Treat 4.5.12

This weeks soups & sweet say Vermont spring to me.  They both taste good when there is still a chill in the air, especially a damp chill.  The feature a few “seasonal” ingredients, and are both very comforting. 

Asparagus & Rice Soup…kind of like risotto but in soup form!  Ingredients…asparagus, olive oil, garlic, potatoes, spring onions, veggie stock, bay leaves, arborio rice, kosher salt & pepper.  Garnished w. Parmigiano-Reggiano.  13. per quart served w. bread for dipping.  Vegetarian, Vegan (minus the parm garnish) & gluten-free.

New England Fish Chowder…I have never offered a fish chowder before & I am not sure why.  I love fish chowder.  This is a traditional New England Fish Chowder but not a gloppy fish chowder.  Your spoon will not stand up straight in this soup!  Ingredients: butter, onions, celery, bacon, red potatoes, clam juice, dried thyme, bay leaves, haddock or cod (depending on the freshness & wild selection), an itty bit of heavy cream tempered by some whole milk, and fresh parsley.  Garnished w. Oyster crackers. Due to the cost of ingredients this soup is 14. per quart & served w. bread for dipping.

Sweet Treat: mini (not too tiny but not jumbo!) Lemon Whoppie Pies  1.50 per pie.

Soups & Sweet 3.29.12

Last week I was cooking with the the windows wide open & the ceiling fan on.  I was searching for flip flops and bathing suits…yes bathing suits!  My girls ducked under the lake, dumped buckets of water on their heads AND played under the sprinkler.  Yesterday I was searching for matching mittens, hats & warm fleece coats.  I have to admit this weather makes me feel more in my element.  I need some time to acclimate to the the mania brought on my longer days & warm temps.  The brisk days days & chilly nights of spring make this much easier!

REALLY good White Chili...Ingredients: chicken breast, canola oil, jalapenos, poblano chilies, Anaheim chilies, onions, cumin, garlic, coriander, cannelloni beans, chicken stock, lime juice, fresh cilantro, kosher salt & pepper.  Garnished w. scallions, cheddar cheese & sour cream.  13. per quart served with bread.  Gluten Free

Cream of Broccoli Soup…This cream of broccoli soup has very little “cream”, so if you prefer dairy free it will taste just as good!  Ingredients: canola oil, leeks, flour, veggie stock, broccoli, optional heavy cream, lemon juice, kosher salt & pepper.  Garnished w. cheddar cheese & roasted broccoli.  13. per quart served w. bread.  Vegetarian & Vegan if specified.

Sweet Treat: Chocolate Chunk Cookies…a mix of milk chocolate & bittersweet chocolate.  1. per cookie

Soups & Sweet Treat 3.22.12

The talk on the street is the weather.  It has thrown me for a loop!  Today we will be washing screens & taking off storms so that the house doesn’t implode from the freakish heat.  Instead of making end of the season comfort soups I have been searching my repertoire for SUMMER soups.  Strange.  Thursday will be warm, but the sun will go down, temps will fall into the 40’s and a quart or two of soup & a sweet treat will still taste great!!!

Chilled Curried Carrot Soup…This soup tastes great chilled or heated…your choice.  Ingredients: canola oil, carrots, onion, shallot, garlic, fresh ginger, jalapeno, coriander, curry powder, veggie stock, coconut milk, lime juice, kosher salt, pepper, & fresh cilantro.  Garnished w. toasted Pepita.  13. per quart served w. bread.  Vegan, vegetarian & gluten-free

Corn & Roasted Red Pepper Chowder…The roasted red peppers in this soup are pureed giving the soup a beautiful color and fresh taste.  Ingredients: unsalted butter, olive oil, onions, celery, carrots, garlic, yukon gold potatoes, chicken stock, coriander, bay leaves, corn, whole milk, roasted red peppers, dash of Tabasco, kosher salt, pepper, & fresh cilantro.  Garnished w. tortilla chips.  13. per quart served w. bread.  Gluten-Free

Sweet Treat: Zucchini-Nut-Bread Sandwich Cookies (filled w. a sweet cream cheese filling) 1.50 per cookie

*****Due to warm temps PLEASE leave some form of ice in your container if you will not be home by 4!

Soups & Sweet Treat 3.15.12

The clocks sprung ahead, I am ready to start my veggie seeds, bulbs are popping out of the ground…ahhhh, spring!  Warm days & chilly nights are forecast for the week.  This weeks soups have a taste of spring and will warm you up when the sun goes down.

If you are able to drop your container off prior to Thursday that is always helpful!!!

Spinach & Zucchini Bisque w. Roasted Leeks…Simple ingredients, complex flavor!  Ingredients: Roasted Leeks: Leeks, olive oil, kosher salt & pepper.  Soup: olive oil, garlic, onion, celery, fennel, zucchini, Yukon gold potatoes, veggie stock, nutmeg, fresh spinach, whole milk, kosher salt & pepper.  Gluten-Free, Vegetarian, Vegan…please specify, milk will be omitted!  13. per quart, served w. bread.

Greek Orzo, Lemon & Chicken Soup…A favorite soup of many!  Ingredients: chicken stock, orzo, eggs, lemon juice & zest, chicken breast, fresh spinach, kosher salt & pepper.  Garnished w. fresh dill.  13. per quart, served w. bread.

 

Half Moon Cookies…a cake like cookie w. half white frosting & half chocolate frosting.  1.50 per cookie.

Soups & Sweet Treat for 3.8.12

Somehow it is Monday already and I am just getting to posting the soups & sweet treat!   Funny what vacation can do to you….I am looking forward to getting the stock pots down, whirring up the kitchen aid & getting back to work!

Indian Red Lentil & Tofu Soup…This is the first soup that was offered when Beets Cooking made it debut.  Full of flavor thanks to coconut milk, lots of fresh cilantro & ginger, and garam masala…yummy, yum, yum!  Ingredients: local carrots, local onions, golden delicious apples, celery, canola oil, garam masala, fresh ginger, veggie stock, tofu, coconut milk, red lentils, kosher salt & pepper. Garnished w. fresh cilantro.  13. per quart served w. bread.  Gluten-free, vegetarian & vegan

Tomato & Meatball Soup...For those of you who follow my soups you know that this is one of my favorites.  The classic flavors of spaghetti and meatballs in soup form!  Ingredients: Meatballs…white sandwich bread, whole milk, shady brook farm ground turkey, Parmesan cheese, fresh basil, garlic, kosher salt, pepper, & dried oregano.  Soup…Olive oil, local onions, local carrots, celery, garlic, chicken broth, diced tomatoes, baby pasta, kosher salt & pepper.  Garnished w. freshly grated Parmesan cheese.  13. per quart served w. bread
