Somehow it is Monday already and I am just getting to posting the soups & sweet treat! Funny what vacation can do to you….I am looking forward to getting the stock pots down, whirring up the kitchen aid & getting back to work!
Indian Red Lentil & Tofu Soup…This is the first soup that was offered when Beets Cooking made it debut. Full of flavor thanks to coconut milk, lots of fresh cilantro & ginger, and garam masala…yummy, yum, yum! Ingredients: local carrots, local onions, golden delicious apples, celery, canola oil, garam masala, fresh ginger, veggie stock, tofu, coconut milk, red lentils, kosher salt & pepper. Tomato & Meatball Soup...For those of you who follow my soups you know that this is one of my favorites. The classic flavors of spaghetti and meatballs in soup form! Ingredients: Meatballs…white sandwich bread, whole milk, shady brook farm ground turkey, Parmesan cheese, fresh basil, garlic, kosher salt, pepper, & dried oregano. Soup…Olive oil, local onions, local carrots, celery, garlic, chicken broth, diced tomatoes, baby pasta, kosher salt & pepper. Garnished w. freshly grated Parmesan cheese. 13. per quart served w. bread
