Soups & Sweet Treat 9.6.12

Today is, meteorologically speaking, the last day of summer, AND a blue moon.  Today is also the day I say a final good-bye to lazy summer mornings, days spent picking fruit, swimming, camping.  A good-bye to bored children, fighting children, and the endless chant of “Mama” that has been part of my life since mid June.  I can’t wait to shop, chop, saute, stir, puree, package & deliver.  My summer hiatus is over!!!!

This is my favorite time of year….the color of the light, the gradual encroachment of darkness, the array of colors in my perennial garden, the temperature, the smell and the produce!  This weeks soups will feature the tomato and sweet corn…the best of summer’s bounty!

Roasted Tomato & Rice Soup…I love slow roasted tomatoes!  I have been know to eat them almost every day during peak tomato season.  They are good with pasta, with grilled meat, with cheese, and my favorite, smeared on baguette.  Here their deep, concentrated flavor turns classic Tomato & Rice soup into something special.  Ingredients:  Roasted Tomatoes: Local plum tomatoes, olive oil, kosher salt, pepper, pinch of sugar & a pinch of dried oregano.  Soup: olive oil, garlic, onion, carrots, celery, oil packed sun-dried tomatoes, veggie stock, tomato juice, fresh basil, white rice.  Garnished with cheddar cheese & croutons.  13. per quart served with bread for dipping.  Vegetarian, Gluten-Free & Vegan minus the cheddar cheese garnish.

Cheddar-Corn Chowder w. Bacon & Scallions…this is my favorite corn chowder recipe.  Probably because I think that almost anything tastes better with a little bacon!  Ingredients: bacon, onion, carrots, celery, garlic, local red or Yukon gold potatoes, chicken stock, dash of cayenne, coriander, Vermont sweet corn mixed with frozen corn, cheddar cheese, whole milk, dash of Worcestershire sauce, kosher salt & pepper.  Garnished with scallions, bacon & cheddar.  13. per quart served with bread.  Gluten-Free
