Soups & Sweet Treat 2.7.13

January is over- what a long month!  This morning I am heading down to the waterfront to cheer on my oldest daughter and many of her Champlain Elementary peers & teachers as they plunge into the lake to raise money for the Vermont Special Olympics.  The crazy things people do for a great cause!  Too bad they don’t have quarts of soup to warm them after their plunge!

Lentil Soup w. Sausage, Chard & Garlic…a delicious, hearty soup!  Ingredients:  olive oil, sweet Italian sausage, onion, celery, carrot, garlic, crushed red pepper flakes, brown lentils, bay leaves, tomatoes, swiss chard, kosher salt & pepper.  Garnished w. garlic oil & Romano.  13. per quart served w. bread.  Gluten-Free

Eastern European Vegetable Stew…hearty, healthy, pretty & delectable…Ingredients: olive oil, onions, garlic, potatoes, carrots, parsnips, turnips, beets, kosher salt, bay leaves, fresh thyme, cider vinegar & spinach.  Garnished w. optional sour cream.  13. per quart served w. bread- Vegetarian, Vegan & Gluten-Free

Sweet Treat: Carrot Cake Cupcakes w. Cream Cheese Frosting- 2. per cupcake
