Soups & Sweet Treat 3.21.13

This coming Thursday maybe spring- BUT- it is going to feel an awful lot like winter.  Warm up with one or both of these cozy soups and rest assured that spring will win (eventually)!  A little side note:  last year at this time I was making a CHILLED carrot soup to beat the crazy warmth!

Black-Eyed Pea & Kale Chili..smoky heat, not SUPER spicy.  Ingredients:  canola oil, onions, celery, garlic, tomatoes, black eyed peas, chipotle in adobo, cumin, coriander, honey, mustard, kale, kosher salt & pepper.  Garnished w. jack cheese.  13. per quart served w. bread.  Vegetarian, Vegan (minus cheese garnish) & gluten-free

Spaghetti & Meatball Soup…I’ve said it before- one of my favorites!  Ingredients:  Meatballs:  ground turkey, parm cheese, garlic, bread, milk, salt & pepper.  Soup: olive oil, onions, garlic, carrots, celery, tomatoes, kosher salt & pepper, baby pasta.  Garnished w. Parmesan cheese.  13. per quart served w. crusty bread.

Sweet Treat:  Brownie Drops- kind of like a brownie bite.  1. per cookie.

Soups & Sweet Treat 3.14.13

What a beautiful weekend!  My kids were outside in bare feet yesterday- only in Vermont!  Bulbs are poking out of the ground, perennials are showing sings of new growth, and the song birds are returning.  It is such a great feeling when spring starts to beat winter.  We do however live in Vermont- as the week progresses the temps are forecast to dip below seasonal norms.  So enjoy the extra daylight and cozy up with a bowl of delicious soup!  Get outside and enjoy the warmth while you can!

Malaysian Cabbage & Peanut…broth infused with ginger, fish sauce, ground peanuts & curry, loaded with russet & sweet potatoes and finished with seared  cabbage.  Ingredients:   cabbage, soy sauce, lime juice, peanuts, garlic, ginger, canola oil, onions, sugar, curry powder, coriander, turmeric, pinch of cayenne, tomatoes, russet potatoes, sweet potatoes, fish sauce, kosher salt & pepper.  Garnished w. chopped peanuts.  13. per quart served w. bread.  Vegetarian, Vegan & Gluten-Free

Chicken Barley Soup…what is there to say?  Comforting & soothing- good for young and old!  Ingredients: canola oil, chicken, onions, celery, carrots, thyme, bay leaves, barley, corn, kosher salt, pepper, chicken stock & fresh parsley.  13. per quart

Tropical Oatstacks- a cookie that falls somewhere between banana bread and a macaroon.  1. per cookie  VEGAN!

Cheddar-Corn Chowder w. Bacon & Scallions…this chowdah has it all!  Ingredients:  bacon, onion, garlic, celery, carrots, potatoes, chicken stock, coriander, corn, whole milk, cheddar cheese, kosher salt & pepper.  Garnished w. scallions, bacon & cheddar cheese.  13. per quart served w. bread

Vegetarian Mulligatawny..yum!  Ingredients:  olive oil, garlic, celery, carrots, lentils, chickpeas, tomatoes, tomato juice, curry powder, cumin, coriander, coconut milk, honey, basmati rice, kosher salt & pepper & fresh cilantro.  Vegetarian, Vegan, Gluten-Free, 13. per quart served w. bread

Sweet Treat:  Lemon Bars- 2. per bar
