 Tortellini Soup…chicken stock, cheese tortellini, carrots, celery, onions, baby spinach, tomatoes, fresh basil, kosher salt & pepper.  Garnished w. Parmesan cheese.  13. per quart served w. bread

Curried Carrot Soup (good hot or cold!)…Carrots, onions, garlic, ginger, coconut milk, coriander, cilantro, lime, kosher salt & pepper.  Garnished w. toasted pepitas.  13. per quart served w. bread  Vegetarian, Vegan & Gluten-Free

Sweet Treat:  Black & White Cookies- 1.50 per cookie

Soups & Sweet Treat 4.18.13

Thanks for all the jars last week!  What a great group of “soupies” I have!

Pasta E Fagioli-when I was in a college one of my go to meals was Progresso canned Pasta E Fagioli soup and a grilled cheese with mozzarella, tomato & red onion.  I still LOVE this meal- minus the canned soup version!  Ingredients- onion, carrot, celery, fennel, garlic, olive oil, tomatoes, veggie stock, white beans, ditalini pasta, fresh basil, parsley, kosher salt & pepper.  Garnished w. Parmesean cheese.  13. per quart served w. bread.  Vegetarian & Vegan (minus cheese garnish).

Thai Chicken w. Ginger & Coconut…what’s not to love?  Coconut, lime, lemongrass & Thai curry?  DELISH! Ingredients- canola oil, chicken breasts, garlic, ginger, lemongrass, Thai curry paste, shallots, tomatoes, potatoes, coconut milk, kaffir lime leaves, scallions, kosher salt & pepper.  13. per quart served w. bread.  Gluten-Free (minus bread!)

Sweet Treat- Lemon Cupcakes w. Lemon Frosting- a sunny treat might help bring the sunshine back!  2. per cupcake.

Soups & Sweet Treat 4.11.13

I almost forgot about this soup- I’m glad I didn’t!  I love meatballs & this soup features them in a light Asian broth that is just right for spring!  Soba Noodles & Turkey Meatballs in Asian Broth- ingredients:  Meatballs- scallions, ginger, garlic, cilantro, lime & ground turkey.  Soup- chicken broth, soy sauce, sesame oil, ginger, garlic, lime, yellow squash, zucchini, bok choy, onions & fresh cilantro.  13. per quart served w. bread

Vegetarian Split Pea– a classic split pea soup, minus the ham & gussied up for spring!  Ingredients- canola oil, carrots, leeks, onions, celery, onions, red wine vinegar, kosher salt & pepper.  Garnished w. fresh peas, sour cream & mint leaves.  13. per quart, vegetarian, vegan (minus garnish) & gluten-free, served w. bread

 

Sweet Treat:  Oatmeal Chocolate Chip Cookies- 1. per cookie

Greek Orzo, Lemon & Chicken Soup…YUM!  spring in a bowl….chicken stock, orzo, eggs, lemons, chicken, spinach, kosher salt & pepper.  Garnished w. fresh dill.  13. per quart served w. bread

Spinach & Zucchini Bisque w. Roasted Leeks…simple yet delicious- the addition of a bit of fennel adds a terrific flavor.  Leeks, olive oil, garlic, onions, celery, fennel, zucchini, yukon gold potatoes, veggie stock, nutmeg, spinach, whole milk, kosher salt & pepper.  Garnished w. fennel fronds.  13. per quart served w. bread. Vegetarian, Vegan (minus milk) Gluten-Free

Sweet Treat:  Red Velvet Cheesecake Bars- 2. per bar
