Pasta E Fagioli-when I was in a college one of my go to meals was Progresso canned Pasta E Fagioli soup and a grilled cheese with mozzarella, tomato & red onion. I still LOVE this meal- minus the canned soup version! Ingredients- onion, carrot, celery, fennel, garlic, olive oil, tomatoes, veggie stock, white beans, ditalini pasta, fresh basil, parsley, kosher salt & pepper. Garnished w. Parmesean cheese. 13. per quart served w. bread. Vegetarian & Vegan (minus cheese garnish).
Thai Chicken w. Ginger & Coconut…what’s not to love? Coconut, lime, lemongrass & Thai curry? DELISH! Ingredients- canola oil, chicken breasts, garlic, ginger, lemongrass, Thai curry paste, shallots, tomatoes, potatoes, coconut milk, kaffir lime leaves, scallions, kosher salt & pepper. 13. per quart served w. bread. Gluten-Free (minus bread!)
Sweet Treat- Lemon Cupcakes w. Lemon Frosting- a sunny treat might help bring the sunshine back! 2. per cupcake.
