Soups & Sweet Treat 5.30.13

What a crazy weather weekend!!!!  We had a fire both Friday and Saturday nights- camping had been on the agenda so we decided to bring it indoors.  Waking up to the blue sky and sunshine this morning was a wonderful thing!  Extremes in weather, typical in Vermont, will be the norm this week.  80’s on Thursday!  When it gets this warm it can be hard to imagine tucking into a bowl of steaming soup.  Both soups this week are chilled- one can be served hot for those adverse to chilled soups.  Enjoy the sunshine and being outside!

Cauliflower Vichyssoise..this can be eaten cold or hot…Ingredients:  olive oil, leeks, thyme, bay laves, cauliflower, veggie stock, whole milk, kosher salt, nutmeg, fresh parsley & scallions.  Garnished w. chopped beets, 13. per quart served w. bread.  Vegetarian, Gluten-Free & Vegan (let me know and I will omit dairy!)

Cucumber w. Yogurt & Dill served w. Grilled Spiced Shrimp…If you are vegetarian & would like this soup just let me know- you can beets instead of shrimp!  Ingredients:  cucumbers, lemon juice, garlic, sugar, salt, pinch of cayenne, low fat yogurt, fresh dill, kosher salt, pepper.  Garnished w. shrimp, sliced red onion & chopped chives.  Gluten-Free, Vegetarian if specified.  13. per quart served w. bread

Sweet Treat: Rhubarb Cake- 1.50 per slice

Soups & Sweet Treat 5.23.13

I am late again.  Something about this time of year- endless soccer games, beds to mulch, veggies to plant, winter clothes that still need to be put away- even with the extra daylight there is never enough time!

I am excited about this weeks soups!  This winter I received Jerusalem a cookbook.  What a beautiful book!  Since, at the recommendation of a friend, I also purchased Plenty by the same author.  The meat soup is from Jerusalem & the veggie from Plenty.  Yum!

Chickpea, tomato & bread soup…a riff on Tuscon ribollita…Ingredients: onion, fennel, olive oil, carrot, celery, tomato paste, white wine, plum tomatoes, fresh oregano, fresh parsley, fresh thyme, sugar, bay leaves, veggie stock, sourdough bread, chick peas, kosher salt & pepper.  Garnished w. fresh pesto. 13. per quart served w. bread.  vegetarian & vegan (if you are vegan let me know- I will take your pesto out before I add the parm!)

Spicy Bulgur soup w. meatballs…the soup is flavored with baharat spice mix: black peppercorns, coriander seeds, cinnamon, cloves, allspice, cumin, cardamom & nutmeg.  Ingredients:  Meatballs: orgainic ground beef, onion, parsley, tich of allspice & cinnamon, flour, olive oil, pepper & kosher salt.  Soup:  olive oil, onion, garlic, carrots, celery, tomatoes, tomato paste, baharat spice mix, sugar, bulgur, chicken stock, kosher salt & pepper.  Garnished w. lemon slices & cilantro.  13. per quart served w. bread.

Sorry for the late posting….busy weekend visiting with family, going on a date with my husband, and gardening! 

Corn, Red Pepper & Zucchini Chowder….full of spring veggies, this is good with or without the dairy…corn, veggie stock, butter, onion, celery, leek or ramps, red peppers, thyme, bay leaves, potatoes, zucchini, OPTIONAL whole milk, garlic & chives.  13. per quart served w. bread.  Vegetarian, Vegan & Gluten-Free

Brazilian Chicken Stew…served w. a side of white rice…canola oil, chicken, onion, garlic, ginger, pickled jalapenos, tomatoes, sugar, Green peppers, red peppers, cashews, coconut milk, cilantro, lemon juice & kosher salt.  13. per quart served w. bread.  Gluten-Free

Sweet Treat: Chocolate Coconut Blondies- 1. per square

Asparagus & Rice- creamy & thick like a risotto- yum!  Olive oil, garlic, carrots, celery, arborio rice, bay leaves, veggie stock, asparagus, kosher salt, pepper & fresh parsley.  Garnished w. freshly grated parm.  13. per quart, served w. bread.  Vegetarian, Vegan (minus parm) & Gluten-Free

Turkey Chili- loads of peppers, beans & ground turkey served w. fresh garnishes.  Ground turkey, mixed bell peppers, jalapeno, black beans, kidney beans, tomatoes, cumin, chili powder, kosher salt & pepper.  Garnished w. jack cheese, sour cream, scallions and cilantro.  13. per quart, served w. bread.  Gluten-Free.
