This will be the last Thursday soup of February.  Starting on the 22nd by girls are on winter break until after Town Meeting Day.  The longest break of the year for those of us not venturing to warm climates!  Hopefully the snow will stay and the warm late winter sun will come out and I can enjoy some winter sports prior to the endless thaw/freeze of March! 

If you have containers and ARE able to drop them off prior to Thursday that would be great.

Vegetarian Mulligatawny Soup…this maybe one of my most popular vegetarian soups.  Ingredients:  olive oil, garlic, onions, celery, carrots, lentils, tomatoes, chickpeas, veggie stock, tomato juice, yellow curry powder, cumin, coriander, coconut milk, honey, basmati rice, kosher salt, pepper & fresh cilantro.  13. per quart served w. bread.  Vegetarian, Vegan & Gluten-Free

Greek Orzo, Lemon & Chicken Soup…This is one of my favorite soups, especially at this time of year.  It is simple, feel good soup.  Ingredients:  homemade chicken stock, orzo, eggs, lemon, chicken breasts, spinach, kosher salt, pepper & fresh dill.  13. per quart served w. bread

Soups & Sweet Treat 2.13.14

I enjoyed winter again this weekend!  My oldest daughter, along with almost 40 of her classmates from Champlain Elementary School, participated in the Penguin Plunge.  They raised $7500.00 for the Vermont Special Olympics.  Brave kids!  The sunshine and blue skies lured me outside on both Saturday and Sunday for my first cross country ski days of the season- beautiful! It sounds like there is a chance for more fresh snow Thursday into Friday.  I have yet (in three years) to have a snowstorm on Thursday.  I’m keeping my fingers crossed that whatever precipitation comes our way will hold on until I am done delivering! 


Vegetarian Chili…a mix of beans, fresh ground chili powder & heartiness from bulgur.  Ingredients:  navy beans, black beans, ancho chiles, New Mexican Chilies, oregano, diced tomatoes, tomato paste, jalapenos, onions, garlic, cumin, soy sauce, bulgur, kosher salt & pepper.  Garnished w. fresh cilantro, lime, sour cream & cheese.  13. per quart served w. bread.  Vegetarian & Vegan (minus dairy garnishes).

Cheddar-Corn Chowder w. Bacon & Scallions…a favorite of many- a fully loaded chowder!  Ingredients:  bacon, onions, carrots, celery, yukon gold or red bliss potatoes, chicken stock, coriander, corn, cheddar cheese, whole milk, dash of worcestershire sauce, kosher salt & pepper.  Garnished w. scallions & bacon.  13. per quart served. bread.  Gluten-Free

It’s February!!!!

Beef & Barley Soup…Classic soup that will warm your bones!  Ingredients:  beef chuck, red wine vinegar, kosher salt, olive oil, garlic, onions, celery, carrots, barley, red wine, tomato pasted, tomatoes, bay leaves, worcestershire sauce, black pepper & fresh parsley.  13. per quart served w. bread

Roasted Beet Borscht…full flavored brightly hued soup!  Ingredients: local beets, garlic, onions, local carrots, fresh thyme, honey, lemon, kosher salt & pepper.  Garnished w. fresh dill & sour cream.  13. per quart served w. bread  Vegetarian, Vegan (minus sour cream garnish) & gluten-free
