What a beautiful weekend!!!  Soccer, gardening, visit to a nursery, walk on the lake.  It was one of those weekends I wished would never end.  Enjoy the sunshine today and tomorrow- Thursday, soup day, is forecast to be rainy and chilly.  Perfect for SOUP!

 

Roasted Beet Borcht…this soup has it’s own following.  Delicious hot or cold.  A ruby red quart of yum that turns pink with a swirl of sour cream.  Ingredients:  Roasted beets, carrots, onions, garlic, olive oil, fresh thyme, veggie stock, apple cider vinegar, honey, kosher salt & pepper.  Garnished w. fresh dill & sour cream.  Gluten-Free, Vegetarian & Vegan (minus sour cream)  13. per quart served w. bread

Thai Ginger Chicken Soup…this is a different Thai Chicken then I usually make.  No tomatoes or potatoes- just coconut milk, ginger, and lime.  Ingredients:  coconut milk, chicken stock, ginger, fish sauce, lime juice & zest, boneless/skinless chicken thighs, mushrooms, scallions, corn, edamame, cilantro, kosher salt & pepper.  Garnished w. Thai red curry paste, lime wedges & extra cilantro.  Gluten Free.  13. per quart served w. bread.

Sweet Treat: Coconut Bars- a coconut cake base topped w. dark chocolate.  2. per bar

The soups for the 15th of May are….

Curried Carrot Soup…this soup tastes wonderful chilled or warm!  Ingredients:  canola oil, carrots, onion, shallots, garlic, ginger, jalapeno, coriander, curry powder, coconut milk, lime juice, cilantro, kosher salt & pepper.  Garnished w. toasted pepitas, 13. per quart served w. bread.  Gluten-Free, Vegan & Vegetarian

 

Albondigas Soup…Mexican Meatball Soup…Ingredients:  canola oil, onion, garlic, chicken broth, fire-roasted tomatoes, summer squash, carrots, celery, cumin, oregano, cilantro, Meatballs:  ground beef, ground pork, rice, garlic, egg, cilantro, scallions.  Garnished w. tortilla chips & fresh cilantro.  13. per quart served w. bread.  Gluten-Free

Soups & Sweet Treat 5.8.14

For those of you who ordered last week- I did NOT break my wrist!  Woot woot!  I sprained it and have been wearing a brace.  The pain has decreased and I am ready to use it on Thursday.  Today is raw and damp, it just does not feel like the first full week of May.  Thursday looks warm- almost HOT (relatively speaking).  I was at the co-op yesterday and noticed local kale is in- so one soup will feature a fresh spring ingredient and the other will be a last hurrah soup- eggplant parm, one of my favorites!

 

Eggplant Parmesan Soup:  KInd of like the best tomato soup ever!  Ingredients:  eggplant, olive oil, garlic, onions, stewed tomatoes, tomato juice, vegetable stock, oregano, basil, croutons, parmesan cheese, balsamic vinegar, kosher salt & pepper.  Garnished w. extra parmesan.  13. per quart served w. bread.  Vegetarian, Vegan (minus cheese).  

Black Eyed Pea & Kale Chili…earthy and smoky with lots of fresh kale!  Ingredients:  olive oil, onion, celery, carrots, garlic, tomatoes, black eyed peas, chipotle in adobo, cumin, coriander, honey, dijon mustard, kale, kosher salt & pepper.  Garnished w. jack cheese.  13. per quart Vegetarian, Vegan & Gluten-Free
