Roasted Beet Borcht…this soup has it’s own following. Delicious hot or cold. A ruby red quart of yum that turns pink with a swirl of sour cream. Thai Ginger Chicken Soup…this is a different Thai Chicken then I usually make. No tomatoes or potatoes- just coconut milk, ginger, and lime. Ingredients: coconut milk, chicken stock, ginger, fish sauce, lime juice & zest, boneless/skinless chicken thighs, mushrooms, scallions, corn, edamame, cilantro, kosher salt & pepper. Garnished w.
