Chickpea & Butternut Squash Soup…This is an AWESOME soup. The broth is full of coconut milk, lime juice, tomatoes, and ginger- hot, sweet, sour and yum! Ingredients: olive oil, onions, carrots, celery, garlic, butternut squash, diced tomatoes, chickpeas, tomato juice, soy sauce, lime juice, ground ginger, coriander, brown sugar, coconut milk, tich of jalapeno, fresh cilantro, kosher salt & pepper. 13. per quart w. bread, Vegetarian, Vegan & Gluten-Free

Broccoli, Cheese & Cauliflower Soup…a classic! Ingredients: broccoli, cauliflower, butter, olive oil, onions, celery, dijon, thyme, milk, chicken stock, cheddar cheese. 13. per quart served w. bread. Gluten-Free

Soups & Sweet Treat 9.25.14

The soups for this Thursday are….

Italian Wedding Soup…I have a picky 8 year old. Most Thursday soup nights we have my soup and I heat her up a can of Progresso Chickarana. You can imagine how painful this is for me! This Thursday she will join us for healthy, delicious homemade soup! This is one of her favorites- spinach and all! Ingredients: for the soup: chicken stock, onions, garlic, carrots, celery,acini de pepe pasta,spinach, kosher salt & pepper. For the meatballs: local ground turkey, eggs, breadcrumbs, garlic, parsley, parm, kosher salt & pepper. 13. per quart served w. bread

Black-Eyed Pea & Kale Chili…a hearty vegetarian chili that makes use of the seasons abundant kale! Ingredients: olive oil, oions, celery, garlic, diced tomatoes, black-eyed peas, chipotle peppers, cumin, coriander, honey, Dijon mustard, kale, kosher salt & pepper. This is a mild chili. 13. per quart served w. bread & garnished with Jack cheese. Vegetarian, Vegan (minus cheese garnish) & Gluten-Free

Soups & Sweet Treat 9.18.14

Last Sunday I was at the beach swimming. This Sunday I am contemplating a fire and turning on the heat. Winter is long here. I feel like I should be sad that it is not beach weather today- but I’m not. I feel most like myself when the temps drop near and below 60. Something about the light, and the smell of the air, AND it is REALLY good soup weather!

Beef & Black Bean Chili w. Chipotle…A favorite of many! Ingredients: red onions, garlic, cumin, chili powder, local ground beef, black beans, tomatoes, chipotle, kosher salt, pepper, lime juice & cilantro. Garnished w. lime marinated red onions, sour cream & jack cheese. 13. per quart served w. bread. Gluten-Free

Eggplant Parmesan Soup…YUM! This may just be my favorite soup! Ingredients:eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, croutons, Parmesan cheese, balsamic vinegar, kosher salt & pepper. Garnished w. grated Parmesan. Vegetarian, VEGAN IF SPECIFIED 13. per quart served w. bread

Corn & Roasted Red Pepper Chowder– Fresh sweet corn & local potatoes w. pureed roasted red peppers- a pretty and tasty soup! Ingredients: olive oil, onions, celery, carrots, garlic, potatoes, veggie stock, coriander, bay leaves, corn, roasted red pepper, light cream (OPTIONAL), cilantro, kosher salt & pepper.
