Eggplant Parm Soup…YUM, I am making this for no other reason then I am craving it…AND a lot of people like it! Ingredients: eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, veggie stock, oregano, basil, croutons, parm, balsamic vinegar, kosher salt & pepper. Soups & Sweet 11.20.14

This will be the last Thursday soup until December! How did that happen…

Cheeseburger Soup…I have a thing for “retro” recipes with updated ingredients. This is the kind of soup that would have been made with Velveeta and other oddly colored “food items”. Here it is updated with Vermont Cheddar, local ground beef, & wholesome veggies. Ingredients: olive oil, local ground beef, onions, carrots, celery, basil, parsley, chicken stock, russet potatoes, milk, cheddar cheese, sour cream, kosher salt & pepper. Gluten-Free 13. per quart served w. bread

Minestrone…Looking through this seasons posts, I realized I have yet to do a Minestrone. If you are GLUTEN-FREE and would like this soup let me know. I cook and add the pasta at the end (so it does not get too soggy). I will simply omit the pasta from yours! Ingredients: white beans, chick peas, tomatoes, tomato juice, onions, carrots, celery, cabbage, zucchini, basil, thyme, parsley, baby pasta, kosher salt & pepper. Garnished w. parm cheese (optional). Puree of Root Vegetable Soup…comforting in the way mashed potatoes are, but much better for you! Ingredients: canola oil, garlic, onions, celery, carrots, parsnips, rutabaga, sweet potatoes, celeriac, veggie stock, pinch of nutmeg, kosher salt & pepper. OPTIONAL whole milk, garnished w. pumpkin seeds. 13. per quart served w. bread Vegetarian, Vegan (minus milk) & Gluten-Free

Spaghetti & Meatball Soup…YUM! Ingredients: Broth: olive oil, onions, tomatoes, carrots, celery, kosher salt & pepper (pureed). Meatballs, local ground turkey, parm. cheese, garlic, bread crumbs, eggs, oregano, basil & parsley. Baby pasta. 13. per quart served w. bread

Welcome November! We have officially entered the best time of year for soup!

Thai Tofu w. Ginger & Coconut…somehow I almost forgot about this soup. But I didn’t- or should I say a customer didn’t- which is a good thing! This is a pretty special soup. Ingredients: ctofu, garlic, ginger, lemongrass, pinch of sugar, Thai red curry paste, shallots, tomatoes, potatoes, coconut milk, kaffir lime leaves, watercress, scallions, kosher salt & pepper. 13. per quart served w. bread. Gluten-Free, Vegetarian, Vegan: FOR THOSE OF YOU WHO PREFER THIS SOUP WITH CHICKEN- LET ME KNOW! I CAN SUBSTITUTE CHICKEN FOR TOFU!!!

Baked Potato Soup…comfort soup! Ingrdients: bacon, onions, carrots, celery, potatoes, chicken stock, milk, parsley, kosher salt & pepper. Garnished w. cheddar cheese, scallions & bacon. 13. per quart served w. bread. Gluten-Free
