It is cold outside- BUT- the soup is warm!

This is last soup Thursday of February. I will be taking the least week of this month off. When I return it will be March. It has to be a bit warmer then!?

Baked Potato Soup…In my mind & taste buds, potatoes and cold weather are a perfect pairing. This soup is adapted from Smitten Kitchen and is the perfect cure for the ridiculous amount of arctic air that has been barreling our way. Lots of garlic, lots of leeks, lots of yum! Ingredients: garlic, olive oil, leeks, veggie stock, bay leaves, russet potatoes, kosher salt, pepper, sour cream. Garnished w. scallions, bacon & grated cheddar. Vegetarian- MINUS BACON Garnish, Gluten-Free, VEGAN if specified…the soup will still be creamy- just more of a Garlic Potato Soup. 13. per quart served w. bread

Eggplant Parm Soup…Another perfect cold weather soup. Healthy from all the veggies yet creamy and filling at the same time. Think of this as the best tomato soup you ever had! Ingredients: eggplant (roasted), olive oil, celery, carrots, onion, garlic, tomatoes, tomato juice, basil, oregano, croutons, parm cheese, kosher salt & pepper. Garnished w. parm, 13. per quart served w. bread. Vegetarian, Vegan (minus parm), if you would like Gluten-Free I can omit croutons.

Sweet Treat: Sunny Lemon Bars 2. per bar

Cold and snow, cold and snow…banish the mid-winter blues with soup!

Tortilla Soup…fresh & zesty with lots of yummy garnishes! Ingredients: canola oil, onions, garlic, cumin, oregano, chili powder, veggie stock, diced tomatoes, diced mild green chilies, lime juice, corn, black beans, corn tortillas, kosher salt & pepper. Garnished w. shredded cheese, cilantro & crushed corn tortilla chips. 13. per quart served w. bread. Vegetarian, Vegan (minus diary garnish) & Gluten-Free

Tomato & Meatball Soup w. Ditalini Pasta…a favorite with many! Ingredients: Meatballs: bread, milk, local ground turkey, Parmesan cheese, basil, garlic, oregano, kosher salt & pepper. Soup: olive oil, onions, carrots, celery, garlic, chicken stock, tomatoes, kosher salt and pepper (pureed to make substantial tomato soup), ditalini pasta. Garnished w. extra parm, 13. per quart served w. bread

Soups & Sweet Treat 2.5.15

I am late, late, late posting! The snow day yesterday made me lazy. Made pretzels, played card games, and braved the elements with my girls. Now- back to reality. It is beautiful outside this morning….AND cold! Warm up with some soup!!!!

Italian Sausage & Zucchini Soup…I love this soup! I use a good quality local sweet Italian pork sausage which infuses the broth with a ton of flavor. Ingredients: olive oil, pork sausage, onions, garlic, tomatoes, celery, green pepper, zucchini, fresh basil, oregano, parsley, kosher salt & pepper. Garnished w. Parm cheese, 13. per quart served w. bread Gluten-Free

Squash & White Bean Soup…Another of my favorite soups. Butternut squash pureed with white beans equals a creamy dairy free soup…unless you choose to gild the lily with a sprinkle of parm cheese. Ingredients: butternut squash, olive oil, garlic, onions, celery, carrots, sage, nutmeg, white beans, kosher salt & pepper. Garnished w. OPTIONAL parm & pumpkin seeds. 13. per quart served w. bread Vegetarian, Vegan (minus cheese) Gluten-Free
