I am late, late, late posting! The snow day yesterday made me lazy. Made pretzels, played card games, and braved the elements with my girls. Now- back to reality. It is beautiful outside this morning….AND cold! Warm up with some soup!!!!
Italian Sausage & Zucchini Soup…I love this soup! I use a good quality local sweet Italian pork sausage which infuses the broth with a ton of flavor. Ingredients: olive oil, pork sausage, onions, garlic, tomatoes, celery, green pepper, zucchini, fresh basil, oregano, parsley, kosher salt & pepper. Garnished w. Squash & White Bean Soup…Another of my favorite soups. Butternut squash pureed with white beans equals a creamy dairy free soup…unless you choose to gild the lily with a sprinkle of parm cheese. Ingredients: butternut squash, olive oil, garlic, onions, celery, carrots, sage, nutmeg, white beans, kosher salt & pepper. Garnished w. OPTIONAL parm & pumpkin seeds. 13. per quart served w. bread Vegetarian, Vegan (minus cheese) Gluten-Free
