Soups & Sweet Treat 2.20.15

It is cold outside- BUT- the soup is warm!

This is last soup Thursday of February. I will be taking the least week of this month off. When I return it will be March. It has to be a bit warmer then!?

Baked Potato Soup…In my mind & taste buds, potatoes and cold weather are a perfect pairing. This soup is adapted from Smitten Kitchen and is the perfect cure for the ridiculous amount of arctic air that has been barreling our way. Lots of garlic, lots of leeks, lots of yum! Ingredients: garlic, olive oil, leeks, veggie stock, bay leaves, russet potatoes, kosher salt, pepper, sour cream. Garnished w. scallions, bacon & grated cheddar. Vegetarian- MINUS BACON Garnish, Gluten-Free, VEGAN if specified…the soup will still be creamy- just more of a Garlic Potato Soup. 13. per quart served w. bread

Eggplant Parm Soup…Another perfect cold weather soup. Healthy from all the veggies yet creamy and filling at the same time. Think of this as the best tomato soup you ever had! Ingredients: eggplant (roasted), olive oil, celery, carrots, onion, garlic, tomatoes, tomato juice, basil, oregano, croutons, parm cheese, kosher salt & pepper. Garnished w. parm, 13. per quart served w. bread. Vegetarian, Vegan (minus parm), if you would like Gluten-Free I can omit croutons.

Sweet Treat: Sunny Lemon Bars 2. per bar
