What a glorious weekend! The shades of green, the lilacs & the apple blossoms at this time of year never cease to amaze me. Thursday looks to be another one of those delightful spring days- that holds just enough chill- for soup to taste great!

Corn & Roasted Red Pepper Chowder…This is a popular chowder- pureed roasted red peppers give it a beautiful color! Ingredients: canola oil, onions, celery, carrots, garlic, yukon gold potatoes, coriander, bay leaves, corn, roasted red pepper, OPTIONAL light cream, fresh cilantro, kosher salt & pepper. 13. per quart served w. bread

Beef & Black Bean Chili…It may not be COLD outside, but pretty soon it will be HOT and chili will be gone until fall. So- this is your last chance until next season! Ingredients:canola oil, red onions, garlic, beef, black beans, tomatoes, chipolte peppers, kosher salt, lime, pepper & cilantro. Garnished w. sour cream, lime marinated red onions & jack cheese. 13. per quart served w. bread. Gluten-Free

Soups & Sweet Treat 5.14.15

Wow! It sure felt A LOT like mid-summer the past three days or so! Thursday is forecast to be more “May like”- comfortable during the day & brisk in the evening. Still soup weather!

Cauliflower Vichyssoise…This soup is wonderful served chilled or warm. It turns a lovely shade of pink when swirled with diced roasted beets. Ingredients: olive oil, leeks, garlic, nutmeg, veggie stock, potatoes, cauliflower, whole milk (optional), bay leaves, kosher salt & pepper. Garnished w. diced roasted beets & chives. Italian Sausage Zucchini Soup..this soup has a wonderfully flavored broth due to the Italian sausage. Ingredients: olive oil, sweet Italian pork sausage, onions, garlic, tomatoes, zucchini, celery, green pepper, fresh basil, fresh parsley, fresh orega, pink of red chili flakes, kosher salt & pepper.
