Soups & Sweet Treat 9.29.16

Fall arrived a day late!  What an absolutely beautiful weekend!  Apple picking, indoor fire, outdoor fire, mums, sunshine and perfect temps- I love this time of year!!

For the last soup Thursday in September I am going to take advantage of the last of the local late summer veggies.

Harvest Tortilla Soup…a fancy word for ramped up veggie chili!  Ingredients:  canola oil, onions, garlic, rainbow peppers, corn, zucchini, tomatoes, cumin, chili powder, black beans, kosher salt, pepper, lime juice, fresh cilantro.  Garnished w. tortillas strips, sour cream & cheddar cheese.  13. per quart w. bread.  Vegetarian, Vegan (minus dairy garnishes) & Gluten-Free

Eggplant Parmesan Soup…Yum!  Those of you who have been ordering soup for years know that this is one of my favorites!  Pureed goodness kind of like the best tomato soup you have ever had!  Ingredients:  eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, croutons, parmesan cheese, balsamic vinegar, kosher salt & pepper.  Garnishes w. additional Parmesan.  13. per quart w. bread.  Vegetarian, Vegan (minus the parm- it is still delish!). 

Sweet Treat: Chocolate Chip Apple Cake 2. per slice
