I was off last week (and today and tomorrow) with my girls for their winter break. I think we experienced all four seasons during that week! Summer- bare feet, ice cream and raking the garden beds, spring- mud season, rain and thunderstorms! & winter- so cold I don’t think we left the house on Saturday. We had lots of fun spending time with friends and family, painting, and cooking! My girls and I made Samosas last Monday- not as good as the Samosa Man’s, but pretty close. I am ready to take the soup pots down and get back into the swing of things!
Eggplant Parmesan Soup…by far one of my most popular soups. Ingredients: roasted eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, garlic croutons, Parmesan cheese, balsamic vinegar, kosher salt & pepper. White Chicken Chili…creamy and full of flavor, mildly spicy & tangy from fresh lime juice. – YUM! Ingredients: white beans, canola oil, jalapeno peppers, poblano peppers, onions, garlic, cumin, coriander, ancho chili powder, chicken stock, poached chicken breasts, fresh lime juice, cilantro, kosher salt & pepper. Garnished w. tortilla chips & sour cream. 13. per quart served w. bread. Gluten-Free
