Hello December!!! This weeks soups are my way of welcoming the shortest days and longest nights of the year. The color of the corn chowder is reminiscent of a winter sunset- when the sky glows orange and pink. The classic Greek “egg soup” makes is soothing and warm.
Corn and Roasted Red Pepper Chowder…puréed roasted red peppers give this soup an amazing depth of flavor and a beautiful color. Ingredients: canola oil, onions, celery, carrots, garlic, Yukon gold potatoes, veggie stock, coriander, bay leaves, corn, light cream, roasted red peppers, cilantro , kosher salt and pepper. 13. Per quart served w. Bread. Vegetarian, Vegan (minus light cream) & Gluten-Free
Greek Avgolemono Soup w. Greens …classic Greek soup made with chicken stock, lemon, dill and thickened w. Eggs. Ingredients: chicken stock, orzo, greens (escarole, chard or spinach) , eggs, lemon juice, fresh dill, kosher salt and pepper. 13. Per quart served w. Bread.
