Soups & Sweet Treat 5.3.18

Crazy Vermont weather will continue this week.  Today cold and rainy-tomorrow almost normal-Wednesday we skip to summer & Thursday still warmer then usual!  This weeks soups reflect warm weather tastes- one can be eaten chilled and the other a classic soup from a hot climate.  Enjoy!

Cauliflower & Parsnip Vichyssoise w. Gremolata…a riff on the classic potato-leek soup known as vichyssoise.  The base is made with cauliflower, leeks, and parsnips, giving it a wonderful earthy flavor.  While this is a “cold” soup it is also wonderful heated- if that is your preference.  Ingredients: butter, olive oil, leeks, parsnips, cauliflower, thyme, veggie stock, light cream, kosher salt and pepper.  Gremolata: butter, olive oil, panko breadcrumbs, slat, pepper. lemon zest, parsley and chives.  Vegetarian & Gluten-Free (minus grmolata) 13. per quart served w. bread.

Sopa De Lima…a chicken soup made with a broth bursting with fresh lime juice- this soup is all about the garnishes! Ingredients: olive oil, onions, garlic, jalapeno, tomatoes, oregano, chicken stock, chicken, lime juice, kosher salt and pepper.  Garnishes: quick marinated radish, cilantro, tortilla chips, lime & cotija cheese.  Gluten-Free, 13. per quart served w. bread

Soups & Sweet Treat 4.19.18

The weather is dreadful. Find the joy in the little things – AND the fact that spring will come, it always does. In the meantime order a quart or two of soup- it will help brighten your day.

African Peanut Stew…full or flavor and soul soothing, perfect for cruel April weather. Ingredients : olive oil, onions, garlic, red pepper, jalapeño, sweet potatoes, dived tomatoes, peanut butter, chili powder, chickpeas, cabbage, kosher salt and pepper. Garnished w. Chopped peanuts and cilantro. 13. Per quart served w. Bread. Vegan, Vegetarina, Gluten-Free

Chicken Barley Soup…chicken and barley brightened up w. Corn, carrots and celery. Ingredients: chicken, onions, celery, carrots, thyme, barley, corn, kosher salt, pepper and fresh parsley. 13. Per quart

Soups & Sweet Treat 4.12.18

I think spring is lost!  In order to help it come out of hiding I started vegetable and flower seeds yesterday. This weeks soups also beckon spring…bright flavors and colors that are reminiscent of tulips, daffodils, and warm sunsets.

Corn & Roasted Red Pepper Chowder…roasted red peppers are puréed, giving this soup a gorgeous color and unique flavor. Ingredients : canola oil, onions, celery, carrots, potatoes, veggie stock, coriander, bay leaves, corn, light cream. Roasted red peppers, cilantro, kosher salt, and pepper. 13. Per quart served w. Bread vegetarian, gluten-free

Albondigas Soup…I can’t believe I haven’t done this soup this year!  One of my favorites. Meatballs made w. Local ground turkey,  a bright and flavorful broth, and veggies. Ingredients : meatballs: ground turkey, white rice, cilantro, parsley, eggs, salt and pepper. Soup: canola oil, tomatoes, garlic, onion, celery, carrots, zucchini, kosher salt and pepper. 13. Per quart served w. Bread. Gluten-free

Soups & Sweet Treat 4.5.18

Black Bean & Sweet Potato Soup…a little chunky, a little creamy- studded w. Sweet potatos and finished w. Zesty lime. Ingredients: canola oil, onions, garlic, coriander, cumin, pinch of anise, black beans, sweet potatoes, like juice, kosher salt and pepper. Garnished w. Lime cream. 13. Thai Red Curry Chicken Noodle Soup…full of bright flavors and crunchy garnishes, this soup will fill you up and brighten your day!  Ingredients: canola oil, shallots, garlic, scallions, ginger, madras curry powder, turmeric, red curry paste, cilantro, chicken stock, coconut milk, fish sauce, soy sauce, chicken, rice noodles, Asian greens. Garnished w. Bean sprouts, scallions, and cilantro. 13. Per quart served w. Bread. Gluten- Free
