Crazy Vermont weather will continue this week. Today cold and rainy-tomorrow almost normal-Wednesday we skip to summer & Thursday still warmer then usual! This weeks soups reflect warm weather tastes- one can be eaten chilled and the other a classic soup from a hot climate. Enjoy!
Cauliflower & Parsnip Vichyssoise w. Gremolata…a riff on the classic potato-leek soup known as vichyssoise. The base is made with cauliflower, leeks, and parsnips, giving it a wonderful earthy flavor. While this is a “cold” soup it is also wonderful heated- if that is your preference. Ingredients: butter, olive oil, leeks, parsnips, cauliflower, thyme, veggie stock, light cream, kosher salt and pepper. Sopa De Lima…a chicken soup made with a broth bursting with fresh lime juice- this soup is all about the garnishes! Ingredients: olive oil, onions, garlic, jalapeno, tomatoes, oregano, chicken stock, chicken, lime juice, kosher salt and pepper. Garnishes: quick marinated radish, cilantro, tortilla chips, lime & cotija cheese. Gluten-Free, 13. per quart served w. bread
