I read yesterday, on the NOAA Burlington site, that we have had 80 days 80 or over this year. I for one say yuck! Heat and humidity are not my things. I crave the crisp days of fall, spring – and even winter. Sweatshirts, increased energy level, and SOUP weather. If the meteorologists are to believed today will be the last hot one for a while! Thursday the highs will be in the 60s and lows may dip into the 40s. Time to tuck into a quart or two of soup!
Indian Spiced Cauliflower Soup …warm Indian spices perked up with a hit of fresh lime and cooled down with a dollop of Greek yoghurt. Ingredients: olive oil, cumin, fennel, onions, potatoes, fresh ginger, garlic, jalapeño, coriander, turmeric, cauliflower ,tomatoes, lime juice, kosher salt, pepper. Garnished w. Greek yoghurt. 13. Per quart served w. Bread. Vegetarian, vegan (minus dairy garnish ), gluten-free (minus bread)
”Hamburger“ Soup : a favorite of mine this is a soup that my grandmother made. I made and froze batches of this near the end of my pregnancy with both my girls. It’s that kind of soup- comforting, filling, and popular with kids and adults. Ingredients: onions, celery, carrots, garlic, local ground beef, barley, ketchup, dried thyme, dried oregano, fresh parsley, kosher salt and pepper. 13. Per quart served w. Bread and Parmesan cheese.
Sweet Treat: Double Chocolate Zucchini Bread – more like a really moist chocolate cake sprinkled w. Confectioners sugar 2 per slice
