The last Soup Thursday in January!  Mid winter has settled in. While the snow, ice, and polar winds feel endless – the days are slowly starting to get longer.  This is the time of year when it’s most important to nourish your body.  A brisk ski or walk and a bowl of soup do wonders!

Coconut Lime Chickpea & Butternut Squash Soup… I can’t believe I haven’t made this soup yet this year!  One of my favorite vegetarian soups, it’s an explosion of flavor!  Ingredients: olive oil, onions, carrots, celery, garlic, butternut squash, tomatoes, chickpeas, tomato juice, tamari, lime juice, ground ginger, coriander, coconut milk, and fresh cilantro. 13. Per quart served w. Bread. Vegetarian, vegan & gluten free

Soups & Sweet Treat 1.24.19

Snow! Cold! January!  Warm up with soup!

Italian Wedding Soup… There are many stories about how this soup got its name- what I think is that the ingredients “marry” together, in a delicious, loving soup! Ingredients: meatballs: ground beef, ground pork, eggs, Parmesan, panko, garlic, parsley, kosher salt and pepper. Soup: olive oil, onions, garlic, carrots, celery, tomatoes, chicken stock, escarole, baby pasta, kosher salt, pepper and fresh parsley. 13. Per quart served w. Bread

Classic Corn Chowder this can be vegetarian minus the bacon garnish- just let me know! Ingredients: sunflower oil, onions, carrots, celery, potatoes, coriander, corn, cheddar cheese, light cream, scallions, kosher salt and pepper.  Garnished w. Optional bacon. 13. Per quart served w. Bread. Vegetarian (minus bacon) and gluten-free

Soups & Sweet Treat 1.17.19

I just learned last week that January is national soup month!  How appropriate since winter seems to be settling into our little northwest corner of Vermont. How about celebrating by ordering a quart or two of soup!

Classic Chicken Noodle… what more is there to say?  Rich homemade chicken stock,    Noodles, and the usual veggies. Ingredients: chicken, onions, garlic, carrots, celery, thyme, bay leaf, parsley, egg noodles. 13. Per quart served w. Bread

Eggplant Parmesan…yum! Ingredients: eggplant, olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, veggie stock, oregano, basil, garlic croutons, Parmesan cheese, kosher salt and pepper. 13. Per quart served w. Bread. Vegetarian

Soups & Sweet Treat 1.10.19

It’s the first full week of January which calls for hearty soups to warm you body and soul!

Lentil Soup w. Sausage & Chard… I love this soup, and I’m not a big fan of lentil soup!  The combination of aromatics, sausage and tomatoes makes for a delicious broth. The lentils add a touch of earthiness and the chard a burst of green. Ingredients: olive oil, local Sweet Italian sausage, onions, celery, carrots,garlic, lentils, bay leaves, crushed tomatoes, ground pepper, Swiss chard, kosher salt and Parmesan cheese. 13. Per quart served w. Bread. Gluten-free 

Loaded Potato Soup… I’ve mentioned before how much I crave potatoes in the winter!  This is a creamy potato soup topped w. Garnishes common with a baked potato.  Ingredients:  butter, garlic, onions, celery, potatoes, veggie stock, onion powder, garlic powder, sour cream, light cream, kosher salt and pepper.  Garnished w. Bacon (optional), chives, and grated cheese.  13. Per quart served w. Bread  vegetarian (minus bacon), gluten-free

Soups & Sweet Treat 1.3.19

Happy New Year!  Phew. I always look forward to the craziness of the holiday season- AND- I always breathe a sigh of relief on New Year’s Day. I’m a person that likes her routine. Waking up on New Year’s Day I feel hopeful, energized, and appreciative of the things that make my life mine. Cheers to all of you on this first day of the new year. Good luck with any resolutions you have made – but most importantly be kind to yourself and others. 2019 needs kindness!

Black-Eyed Pea & Kale Chili… for those of you that didn’t eat your black-eyed peas today, eat them Thursday!  They are suppose to bring luck in the new year, which is something we could all use. This chili is a perfect winters day soup…smoky, earthy, filling and good for the body and soul!  Ingredients: bacon, onions, celery, garlic, diced tomatoes, black-eyed peas, chipotle in adobe, cumin, coriander, dijoun mustard, shredded kale, kosher salt and pepper. Garnished w. Grated jack cheese. gluten-free. 13. Per quart served w. Bread

Carrot Soup w. Tahini & Crisped Chickpeas… this sounds like the kind of soup you should eat during the first week of the new year. It tastes like something so much more!  I’m not a big fan of cooked carrots (unless they are drizzled w. Olive oil, sprinkled with salt and roasted in a VERY hot oven ). Anyhow…this simple soup, thanks to its creamy texture and wonderful toppings , may change your mind towards cooked carrots!  Ingredients: olive oil, carrots, onions, garlic, coriander, cumin, kosher salt, Aleppo pepper, veggie broth.  Crisped Chickpea Garnish: chickpeas, olive oil, cumin, kosher salt. Also garnished w. Lemon-tahini sauce and a sprinkle of parsley. Vegetarian, Vegan & Gluten-free. 13. Per quart served w. Bread.
