This will be the last soup Thursday of February!  For those of you visiting warm climates next week, please soak up some warmth and color for me. Although I do enjoy the stark beauty of Vermont’s winters, I start to miss color at this time of year!

Classic Chicken Noodle… what more is there to say?  Winter comfort food at its best!  Ingredients: homema stock, chicken, celery, carrots, egg noodles, kosher salt, pepper and fresh parsley. 13. Per quart served with bread 

Soul-soothing African Peanut Stew… this soup comes from the much heralded vegan cookbook The Oh She Glows Cookbook.  It’s creamy and filling thanks to the peanut butter, full of good for veggies, and the broth ultra flavorful. You will forget you are eating something so good for you!  Ingredients: olive oil, onions, garlic, red pepper, jalapeño, sweet potatoes, diced tomatoes, natural peanut butter, veggie stock, chili powder, chickpeas, kale, kosher salt, pepper and fresh cilantro. 13. Per quart served with bread. Vegetarian, vegan, gluten-free

Soups & Sweet Treat 2.14.19

This week Soup Thursday is on Valentine’s Day!  As an ode to the holiday of glitter, hearts and love I will be offering a red soup and a soup that will give your mid winter body the love it deserves!

Beet Fennel Soup…. delicate and full of flavor this soup turns a lovely shade of pink when swirled with Greek yogurt.  Ingredients: olive oil, fennel, onions, garlic, thyme, veggie stock, beets, kosher salt and pepper. Garnished with fresh dill, Greek yogurt, and diced Persian cucumbers. 13. Per quart served with bread. Vegetarian, vegan (minus yogurt) & gluten-free 

Gingered Turkey Meatball Soup… full flavored broth , think ginger, garlic, herbs, onion and soy- tender meatballs, veggies and rice noodles .  Yum!  Ingredients: meatballs: local ground turkey, Greek yogurt, mix of cilantro and basil, bread crumbs, garlic, ginger, lime zest, salt and pepper.  Soup: chicken stock, onions, mushrooms, greens, carrots, soy sauce, and rice noodles.  Garnished w. Additional fresh herbs.  13  per quart  served with bread

Soups & Sweet Treat 2.7.19

The soups for the first full week of February are…

Creamy Tomato & Cauliflower… this is the perfect bowl of soup to warm up with at them end of the dreary week we have forecast!  I can easily modify this soup to be vegan – and it will still be delicious!  Just let me know!  Ingredients: olive oil, onions, garlic, celery, cauliflower, veggie stock, fresh thyme, tomatoes, light cream, cheddar cheese, kosher salt & pepper. Garnished w. Cheddar and a sprinkling of chives. 13. Per quart, served with bread. Vegetarian, vegan (if specified) & gluten-free 

Classic Corn Chowder.. traditional corn chowder w. Bacon, potatoes, and corn!  Ingredients: bacon, carrots, onions, celery, garlic, potatoes, corn, light cream, chicken stock, kosher salt and pepper. Garnished w. Scallions. 13. Per quart served with bread. Gluten-free 

Sweet Treat: Salted Butter Chocolate Chunk Shortbread Cookies 1. Each
