Greetings!  I hope that everyone had a wonderful weekend. Once again it looks like Thursday will be the perfect soup weather!  While I love making soup, I am getting tired of soup weather and am ready for picnic weather…or bbq weather…or turn the heat off for good weather!  Some of you have been asking when I will wrap it up for the season. At this point I am letting the weather dictate the date. Once it consistently reaches the 70’s people begin to have their soup fill until September. In the meantime, enjoy a quart or two this Thursday and fill the freezer the hiatus that will eventually arrive!

Lentil Soup w. Sausage and Chard… a wonderful soup with a rich broth, local Italian sausage, and tender Swiss chard. Ingredients: olive oil, onions, garlic, carrots, celery, tomatoes, lentils, sausage, bay leaves, Swiss chard, kosher salt, and pepper. 13. Per quart served with bread. Gluten-free 

Veggie Chili… packed w. Black beans and veggies!  Ingredients: canola oil, onions, garlic,red bell pepper, jalapeño, corn, zucchini, tomatoes, cumin, chili powder, black beans, kosher salt, and pepper. Garnished w. Cilantro & tortilla chips. 13. Per quart served with bread. Vegetarian, vegan & gluten-free

Enjoy the weather today- back in the damp, cool pattern tomorrow!  Cheer yourself up with a quart or two of soup!

Braised Ginger Meatballs in Coconut Broth… this is a new recipe from Smitten Kitchen. I made it this weekend…and it is sooooo good. Ginger, garlic, lemongrass, lime, chili pepper and turmeric steep in chicken broth and coconut milk. Tender meatballs, rice noodles and fresh herbs. Yum!  Ingredients: meatballs: ground pork, ground turkey, eggs, pinko, ginger, garlic, fish sauce, kosher salt. Broth: coconut milk, chicken broth, ginger, garlic, green chili, lime zest, lime juice, lemon grass, turmeric, rice noodles, a few handfuls of baby spinach. Garnished w. Fresh mint and cilantro. 13. Per quart served with bread 

Curried Carrot Soup… a beautiful colored soup warm with curry and made creamy by coconut milk.  Ingredients: canola oil, carrots, onions, shallots, garlic, tiny bit of jalapeño, coriander, curry powder, kosher salt, coconut milk, lime juice, and fresh cilantro. Garnished w. Toasted pepitas. 13. Per quart served with bread
