Despite the chilly temps- it almost felt like spring this weekend. The first crocus bloomed in my garden and we went on our first picnic of the season yesterday. Hope you all have a wonderful last week of March.

Asparagus, Potato & Herb Soup…this soup is creamy and filling yet still tastes of spring thanks to the plethora of fresh herbs. Ingredients : asparagus, butter, garlic, onions, celery, fennel, Yukon gold potatoes, veggie stock, white wine, fresh basil, fresh dill, fresh tarragon, light cream, kosher salt and pepper. 13. Italian Sausage & Zuchhini Soup…full of flavor and vegetable heavy this is a thoroughly satisfying soup. Ingredients : olive oil, onions. Celery, carrots, green pepper, garlic, sweet Italian sausage, tomatoes, oregano, parsley, basil, zucchini, kosher salt and pepper. Garnished w. Freshly grated Parmesan cheese. 13. Soups & Sweet Treat 3.22.18

The calendar says that tomorrow is the first day of spring!   The snowpack and temps say different- but, the maples are starting to flower and bulbs are popping in sunny south facing spots.  Treat yourself to a comforting quart or two of soup and enjoy the warming March sun and longer days.

Classic Chickem Noodle…the quientisental cure all! Ingredients : from scratch chicken stock (wings and legs, onions, garlic, carrots, celery, parsley, thyme, kosher salt and pepper), chicken, carrots, celery, egg noodles, and fresh parsley. 13. Per quart served w. Bread

Carrot Ginger Soup… spring in a bowl!  Ingredients : leeks, carrots, celery, fresh ginger, veggie stock, coriander, ground ginger, light cream, kosher salt and pepper. Garnished w. Greek yougurt toasted pumpkin seeds. Vegetarian , vegan (minus the dairy, please specify) gluten-free. 13. Per quart served w. Bread.

Soups & Sweet Treat 3.15.18

I am looking forward to taking down the soup pots and getting back to work!  A bit of business before posting this weeks goods…

In addition to Thursday soups I do Tuesday meals. I offer a choice of two entrees w. Side dishes in two different sizes. Some order one, some both – some weekly, some a few times a month. Two of my longtime customers have moved away. I am looking to fill these spots. You DO not to need to commit to a weekly order, but a minimum of twice a month is required. Beef & Black Bean Chili…yum!  The favorite of all the different chilis I make. Ingredients : canola oil, garlic, onions, chipotle in adobo, cumin, chili powder, black beans, ground beef, tomatoes, lime juice, fresh cilantro and kosher salt. 13. Tomato Orzo Soup w. Soups & Sweet Treat 2.15.18

I listen to a lot of radio while I am working. Last week, on Vermont Edition, there was a show about winter foods. It touched on so many of the things I love about cooking – and cooking for other people. Food, weather, comfort, mood, and well being are tied together for me. One of the chefs on the show, Katie Webster, shared two soup recipes. They are perfect for this time of year…here they are, slightly adapted.

Thai Coconut (chicken) Noodle Soup…if you would like this soup and are Vegetarian, let me know and I will modify.  Ingredients: coconut milk, brown sugar, fish sauce, red pepper flakes, lime juice and zest, garlic, ginger, lemongrass, shiitake mushrooms, red pepper, Napa cabbage, scallions, thin rice noodles, scallions, cilantro, and Thai basil. 13. Per quart served w. Bread. Gluten -Free (vegetarian if specified ) Lactose Free

Potato & Kale Soup w. Andouille…I think the Potato gets a bad rap. On its own, not fried or slathered with butter and sourcream, it’s a pretty health choice. They are full of vitamin c, vitamin B6, and heart healthy fiber. Plus , they are comforting and grounding at this time of year. Ingredients: olive oil, garlic, leeks, celery, carrots, marjoram, ground anise, white wine, Yukon gold potatoes, chicken stock, kale, andouille sausage, kosher salt and pepper.  13. Soups & Sweet Treat 2.8.18

It looks like it will be a snowy week!  Treat yourself to a quart or two of soup!

Sausage Minestrone w. Orzo…a hearty winter Minestrone filled w. Sweet Italian Sausage, veggies, beans and orzo. Ingredients: sweet Italian Sausage, olive oil, onions, garlic, celery, carrots, tomatoes, tomato juice, bay leaves, chickpeas, zucchini, summer squash, red potatoes, orzo, kosher salt and pepper. Garnished w. Parmesan cheese. 13. Per quart served w. Bread. Can be made gluten-free- will omit orzo. 

Broccoli Cheddar…a classic!  Ingredients: Butter, onions, garlic, celery, carrots, veggie stock, flour, broccoli, light cream, cheddar cheese, kosher salt, pepper. Garnished w. Additions cheddar. 13. Per quart served w. Bread. Vegetarian

Thursday Soup Willa be on the first day of February!  The shortest month of the year AND the days are getting longer.

Creamy Chicken and Wild Rice Soup…a friend just shared this recipe with me. It is delicious and different and features all kind  Sof things that taste wonderful mid winter. Mushrooms, kale, and wild rice in a light cream broth. Ingredients : bacon, onions, carrots, celery, fresh thyme, cremini mushrooms, chicken stock, kale, chicken, wild rice , half and half, kosher salt and pepper. 13. Per quart served w. Bread. Gluten-free 

Puree of Root Vegetable Soup…this soup celebrates all of the wonderful, locally grown, root vegetables that we can find all winter long.  People who claim to not like root veggies love this soup. It’s the creamy, rich texture- comfort food reminiscent of mashed potatoes. Ingredients: butter, garlic, onions, carrots, parsnips, turnips, sweet potatoes, celeriac, veggie stock, nutmeg, light cream, kosher salt and pepper. 13. Soups & Sweet Treat 1.25.18

Corn Chowder…classic corn chowder…Ingredients: butter, canola oil, carrots, celery, garlic, potatoes, coriander, corn, cheddar cheese, light cream, scallions, kosher salt and pepper. Garnished w. Optional bacon. 13. Per quart served w. Bread. Vegetarian (minus bacon) & Gluten-Free

Chicken and Rice….this maybe one of my favorite things to eat in the winter- yet it’s never been on the menu.  This is simplicity at its best, comforting, full of flavor, and soothing at the end of s mid winter day. This is often called a “bog” in the south. The rice , because it is cooked in the broth, soaks up a lot of liquid. If you prefer a brothier “bog”add some water when re-heating. It is so flavorful that it will not become diluted. I like to eat mine with a pat of butter and an additional sprinkling of salt. Ingredients: whole, naturally raised chickens, water, kosher salt, black pepper, white rice and lemon juice. Garnished w. Bright salad of parsley, chives and thinly sliced celery. 13. Per quart served w. Bread. Gluten-free

Soups & Sweet Treat 1.18.18

I hope that everyone had a wonderful weekend. The fresh snow, blue sky, and sunshine did wonders for me.

Vegetable Ramen in Miso-Ginger Broth… this broth is the perfect comfort food, especially for sore throats or winter blues. Ingredients: canola oil, ginger, scallions, carrots, butternut squash, white miso, sesame oil, soy sauce, veggie stock, udon Noodles, water chestnuts, bitter winter greens. 13. Pasta & Meatball Soup…pasta and meatballs maybe one of my top five favorite things to eat- therefore this soup is in effect of my favorites.  Creamy tomato based broth with little meatballs and baby pasta!  Ingredients: broth – olive oil, onions, carrots, garlic, celery, diced tomatoes, kosher salt, pepper, and oregano.  Meatballs: ground beef, ground pork, breadcrumbs , Parmesan cheese, milk, garlic, parsley, salt and pepper  , the soup is finished with baby pasta.  13. Soups & Sweet Treat 1.11.17

We survived!  What a stretch of arctic weather. Thursday will feel like a heat wave in comparison!

Lemony Carrot & Cauliflower Soup…this soup has a beautiful color and is full of things good for you-  Veggies, miso (fermented goodness), and lemon.  Although it is bursting with healthy ingredients it tastes rich and satisfying. Ingredients: olive oil, cumin, onions, garlic, local carrots, cauliflower, white miso, lemon juice, lemon zest, pinch of anch chili powder, kosher salt, pepper, and fresh cilantro. Garnished w. Toasted pumpkin seeds. 13. Per quart served w. Bread. Vegetarian, Vegan & Gluten-Free

Classic Chicken Noodle….a favorite of many.  A rich, from scratch chicken broth with lots of noodles, some veggies and chunks of chicken. Good for whatever ails you!  Ingredients: chicken, bay leaves, bit of tomato paste, celery, carrots, onions, egg Noodles, kosher salt, pepper, and fresh parsley. 13. Per quart served w. Bread
