Soups & Sweet Treat 9.6.18

Labor day has come and gone, that’s means it’s time for the soup pots to come down! What a summer- record heat, record humidity, not my favorite!  Tomorrow looks brutal BUT after that the air may change. I’m looking forward to cooler days, colder nights and softer light. This weeks soups take advantage of amazing late summer produce and can be enjoyed chilled, at room temp or heated.

Simple Corn Chowder…the amazing flavor from this corn chowder comes from using the cons of the fresh corn to make a quick stock. This soup is surprisingly just as delicious chilled as it is hot!  Ingredients: fresh local corn, bay leaf, fennel seeds, coriander seeds, pepper, butter, onions, garlic, potatoes, half and half, kosher salt, and garnished w sliced scallions. 13. Gazpacho …a smooth version loaded with fresh tomatoes, cucumbers , peppers, and fresh herbs  Ingredients: bread, tomatoes, cucumbers, sweet peppers, fresh oregano, onions, garlic, kosher salt, pepper, olive oil Garnisjed w. Fresh herbs and diced veggies  13. Per quart served w bread  vegetarian and vegan

Black Bean & Chorizo Soup w. Avocado Crema…thanks to ground cumin and slightly spicy chorizo, this is a black Bean soup full of bold flavors. Ingredients : black beans, bay leaf, onions, thyme, parsley, chorizo, garlic, cumin, chicken stock, kosher salt and pepper. Garnished w. Acovado crema & quick pickled radishes. 13. Per quart served w. Bread. Gluten-free

Soups & Sweet Treat 5.17.18

Reminder: as the days are growing warmer PLEASE leave some form of ice pack in your cooler, bag, box etc. I deliver between 1:30-3:30 – it is important that your soup remains properly chilled!

Thai Red Curry Shrimp Noodle Soup…a bit of spice mellowed by coconut milk and lemon. A handful of rice noodles and some juicy shrimp make it a complete meal. Ingredients: canola oil, ginger, garlic, lemongrass, cilantro, turmeric, a bit of Thai red curry paste, pinch of sugar, veggie stock, fish sauce, coconut milk, shrimp, rice noodles and lime juice. Garnished w. Lime wedges & bean sprouts. 13. Per quart w. Bread. Gluten-free

Lemony Carrot and Cauliflower Soup…pretty to look at, full of good for you veggies and tastes great!  Ingredients: crushed coriander seeds, olive oil, garlic, onions, carrots, white miso, cauliflower, lemon zest, lemon juice, kosher salt and pepper. 13. Soups & Sweet Treat 5.10.18

Spring is finally, really here!  Signs around my yard – daffodils, tulips, baby leaves, lettuce and chard growing, cherry blossoms – AND an orphaned baby squirrel that has taken up residence in my chicken coop. As a gardener I am not fond of what I call “tree rats”. However, this little rodent is bringing out my nurturing instincts. Hopefully he/she will join the other squirrels soon, OR become a chicken. Nature is always full of surprises.

Enjoy the sunshine and new growth this week. Order a quart or two of soup, and maybe enjoy it outside!

Soups & Sweet Treat 5.3.18

Crazy Vermont weather will continue this week.  Today cold and rainy-tomorrow almost normal-Wednesday we skip to summer & Thursday still warmer then usual!  This weeks soups reflect warm weather tastes- one can be eaten chilled and the other a classic soup from a hot climate.  Enjoy!

Cauliflower & Parsnip Vichyssoise w. Gremolata…a riff on the classic potato-leek soup known as vichyssoise.  The base is made with cauliflower, leeks, and parsnips, giving it a wonderful earthy flavor.  While this is a “cold” soup it is also wonderful heated- if that is your preference.  Ingredients: butter, olive oil, leeks, parsnips, cauliflower, thyme, veggie stock, light cream, kosher salt and pepper.  Gremolata: butter, olive oil, panko breadcrumbs, slat, pepper. lemon zest, parsley and chives.  Vegetarian & Gluten-Free (minus grmolata) 13. per quart served w. bread.

Sopa De Lima…a chicken soup made with a broth bursting with fresh lime juice- this soup is all about the garnishes! Ingredients: olive oil, onions, garlic, jalapeno, tomatoes, oregano, chicken stock, chicken, lime juice, kosher salt and pepper.  Garnishes: quick marinated radish, cilantro, tortilla chips, lime & cotija cheese.  Gluten-Free, 13. per quart served w. bread

The weather is dreadful. Find the joy in the little things – AND the fact that spring will come, it always does. In the meantime order a quart or two of soup- it will help brighten your day.

Soups & Sweet Treat 4.12.18

I think spring is lost!  In order to help it come out of hiding I started vegetable and flower seeds yesterday. This weeks soups also beckon spring…bright flavors and colors that are reminiscent of tulips, daffodils, and warm sunsets.

Corn & Roasted Red Pepper Chowder…roasted red peppers are puréed, giving this soup a gorgeous color and unique flavor. Ingredients : canola oil, onions, celery, carrots, potatoes, veggie stock, coriander, bay leaves, corn, light cream. Albondigas Soup…I can’t believe I haven’t done this soup this year!  One of my favorites. Meatballs made w. Local ground turkey,  a bright and flavorful broth, and veggies. Ingredients : meatballs: ground turkey, white rice, cilantro, parsley, eggs, salt and pepper. Soup: canola oil, tomatoes, garlic, onion, celery, carrots, zucchini, kosher salt and pepper. 13. Soups & Sweet Treat 3.29.18

Despite the chilly temps- it almost felt like spring this weekend. The first crocus bloomed in my garden and we went on our first picnic of the season yesterday. Hope you all have a wonderful last week of March.

Asparagus, Potato & Herb Soup…this soup is creamy and filling yet still tastes of spring thanks to the plethora of fresh herbs. Ingredients : asparagus, butter, garlic, onions, celery, fennel, Yukon gold potatoes, veggie stock, white wine, fresh basil, fresh dill, fresh tarragon, light cream, kosher salt and pepper. 13. Italian Sausage & Zuchhini Soup…full of flavor and vegetable heavy this is a thoroughly satisfying soup. Ingredients : olive oil, onions. Soups & Sweet Treat 3.22.18

The calendar says that tomorrow is the first day of spring!   The snowpack and temps say different- but, the maples are starting to flower and bulbs are popping in sunny south facing spots.  Treat yourself to a comforting quart or two of soup and enjoy the warming March sun and longer days.
