Eggplant Parmesan Soup..This is one of my FAVE soups- even sworn eggplant haters will be surprised to find that they like it. Ingredients: eggplants (roasted), olive oil, garlic, onions, celery, stewed tomatoes, tomato juice, oregano, basil, garlic croutons, shredded parm, balsamic vinegar, kosher salt & pepper. Garnished w. fresh basil & parm. Vegetarian, Vegan (the parm is omitted and it still tastes great!) 13. per quart served w. bread for dipping.
Smoky Meatball & Vegetable Soup…. This recipe was just given to me by a friend. I made it this past week & yum! Ingredients: olive oil, onions, carrots, celery, chicken stock, hominy, ground pork, garlic, oregano, egg, bread crumbs, chipoltes in adobo sauce, lime juice, kosher salt & pepper. Garnished w. fresh cilantro & lime. 13. per quart served w. bread for dipping.
